Millefoglie al profumo di lime (curd)/Powered by Exquisa

Niente ci piace di più del profumo di lime che resta sulle mani dopo averli spremuti. E può sembrare banale ma i profumi hanno il potere di riportarci in un attimo in posti lontani, o in momenti di vita vissuti tanto tempo prima, di ricordarci persone e cose che riaffiorano nel cuore. Non ci sono regole, basta chiudere gli occhi e lasciarsi trasportare dai ricordi. La fine dell'Estate è un po' così fatta di luci più romantiche, di giornate lente e nuovi pensieri. Di tramonti profondi, pieni di colori che dipingono l'orizzonte, di cieli blu e stelle che ogni notte tornano a brillare sopra i nostri occhi. Se le stelle potessero parlare, quante storie racconterebbero. E in questo ballo di ricordi, nuovi inizi e profumi di vita vi raccontiamo una ricetta golosa e facile da realizzare, perfetta per ritrovarsi con la famiglia e gli amici dopo giorni di mare, montagna o viaggi avventurosi. E' davvero facile da preparare così potrete avere tutto il tempo per raccontarvi i momenti più belli.
Millefoglie di pasta fillo, profumato al lime curd con cremoso di panna ed Exquisa (classico), more e fiori di menta. Assolutamente buono! E non perdetevi l'idea in più perché è super deliziosa, da provare davvero.
E nella spesa di oggi ancora un pizzico di Estate e il tocco in più di Exquisa.



Ingredienti (dosi per circa 4 millefoglie)
250g Exquisa Classico
250ml panna fresca
zucchero al pepe rosa (o zucchero normale) 1 cucchiaio o q.b.

pasta fillo Exquisa
burro fuso q.b./zucchero a velo

Per il limecurd
succo di 2 lime
2 uova medie
60g burro
60g zucchero
1 cucchiaio di zucchero a velo

more q.b.
scorza di lime
menta fresca

Per prima cosa prepariamo il lime curd, una crema di lime profumatissima e davvero buona, ci vogliono pochi minuti e ne vale davvero la pena!
Versare in una terrina il burro fuso, il succo di lime, le uova, lo zucchero e lo zucchero a velo e frullare con le fruste elettriche per qualche minuto. Cuocere a bagno maria a fuoco medio continuando a mescolare con un cucchiaio di legno. Il lime curd è pronto quando avrà raggiunto una consistenza cremosa.
Versare il composto in una terrina e lasciare raffreddare a temperatura ambiente (conservare poi in frigorifero coperto con pellicola).



Dedichiamoci ora alle cialdine di pasta fillo Exquisa: srotolare la pasta, premere un coppa pasta rotondo e tagliare i dischi con una forbice per alimenti (ci vorranno 8 cialdine circa a persona per due strati o 12 per tre). Disporre ogni disco su placca da forno precedentemente rivestita di carta oleata e spennellare ogni lato della pasta fillo con un filo di burro fuso (saranno così più saporite e croccanti, potete aggiungere anche un po' di zucchero a velo per renderle più dolci). Cuocere le cialdine in forno a 200°C (funzione grill) per 3/4 minuti circa ma tenetele sotto controllo perché la cottura dipende dal forno e potrebbero bruciare in un attimo. Sfornatele dorate e lasciate raffreddare.



Siamo quasi pronti, manca solo il tocco di Exquisa classico: mescolare il formaggio cremoso, a parte montare la panna (che deve essere freddissima) con un cucchiaio (o più se preferite) di zucchero al pepe rosa (lo abbiamo preparato noi aggiungendo del pepe rosa macinato al pestello e conservato in vetro, aggiunge una nota speziata ma davvero leggera ma se preferite potete sostituirlo con lo zucchero comune o con quello alla vaniglia). Incorporare la panna al formaggio cremoso, versare in un sac-à-poche e siamo pronti per impiattare. Il formaggio Exquisa è davvero il tocco in più che non deve mancare, rende la crema più ricca e il sapore più intenso e rotondo, semplicemente...buono.



Disporre qualche cialdina croccante una sull'altra, aggiungere la crema di panna e Exquisa creando dei riccioli (o la decorazione che preferite), aggiungere un po' di lime curd al centro e decorare con qualche mora, ripetere aggiungendo di nuovo le cialdine, la crema di panna e formaggio, il lime curd e le more (ripetere di nuovo per un dolce super goloso). Finite con scorza di lime e qualche fiore di menta (o foglie di menta), quelli nelle foto sono fiori di menta piperita che crescono nel nostro orto, profumatissimi.
Servire subito e gustare in compagnia con la brezza della sera, le luci del tramonto, qualche candela accesa... e buona fine Estate a tutti.







Consiglio: non siete pratici nell'impiattamento  o avete poco tempo per realizzarlo? Risolvete così: servite il dessert in bicchieri o coppette creando degli strati, sarà un millefoglie...destrutturato!



L'idea in più davvero davvero golosa e consigliatissima! Surgelate le more, appena prima di servire frullatele con succo di limone e zucchero (frullatore con coperchio, non a immersione perché le more ghiacciate schizzano ovunque e potreste ritrovarvi con la cucina messa peggio del set di The Walking Dead). Otterrete una granita cremosa buonissima e molto fresca, aggiungete un po' di lime curd, un cucchiaio di crema di panna ed Exquisa, qualche mora fresca e scorza di lime (se vi piace anche un goccio di vodka) e avrete un dessert facilissimo da preparare e semplicemente super e servito nei bicchierini da tè del Marocco era davvero molto cool. Da provare...e riprovare in tutte le varianti che più ci stuzzicano per coccolarci nelle serate di fine Agosto (e oltre), in attesa della nuova Stagione (e di nuove ricette).



Note:
.Aggiustate le dosi di zucchero a vostro piacere aggiungendone poco per volta continuando ad assaggiare.
.Preparate il lime curd e le cialdine e tenetele da parte, montate la panna con il formaggio e impiattate appena prima di servire (per mantenere la croccantezza della pasta fillo) mentre i vostri ospiti si godono le chiacchere e la compagnia.
.Se avanzate del lime curd potete conservarlo in frigorifero per un paio di giorni e aggiungerlo allo yogurt, alle macedonie di frutta, al gelato alla vaniglia o anche a una semplice fetta di pane tostato.
.Se avete intolleranze potete sostituire burro, panna ed Exquisa Classico con i prodotti senza lattosio (Exquisa senza lattosio)
.Preparate un paio di millefoglie in più...andranno a ruba!

The end of Summer is a bit like this, made of romantic lights, new thoughts and slow days full of perfumes that make you remember. Of deep sunsets,full of colors that paint the horizon, blue skies and stars that glitter every night over our eyes. If the stars could talk, how many stories would tell. And in this dance of memories, new beginnings and fragrances of life we tell you about a gourmet and easy to make recipe, perfect for family and friends after days of sea, mountain or adventurous travels. It's really simple to prepare so you'll have time to tell you the most beautiful moments of this Summer. Well: millefoglie of pasta fillo scented with lime curd, with a creamy of whipped cream and soft Exquisa cheese, blackberries and peppermint flowers. Absoutely good and don't miss the "one more idea" because it's really delicious, to try. And Today shopping list is about late Summer memories, scent of lime and the intense touch of Exquisa cream cheese.


INgredients (for 4 millefoglie)
250g Exquisa Classic
250ml fresh cream
pink pepper sugar (or common sugar) as enough

Exquisa fillo
melted butter/icing sugar as enough

For the limecurd
2 lime juice
2 medium eggs
60g butter
60g sugar
a tbspoon icing sugar

blackberries
lime zest
fresh mint

First we prepare the limecurd, a fragrant and really good lime cream, it only takes a few minutes and it's Worth it. Pour the melted butter, lime juice, eggs, sugar and icing sugar into a bowl and whip with the electric whips for a few minutes. Cook on a bainmarie over medium heat continuing stirring with a wooden spoon. The lime curd is ready when it has reached a creamy consistency. Pour the mixture into a bowl and let cool at room temperature then store in the refrigerator covered with film.



Let's now dedicate to the Exquisa pasta fillo, unroll it, press on with a round pasta cutter and cut with food scissors (it will takes about 8 discs per person for two layers or 12 for three). Place each disc on an oven plate covered with oily paper and brush each side of the pasta with just a bit of melted butter  (to make them more tasty and crispy, you can also sprinkle a bit of icing sugar to make them sweeter). Bake at 200°C (grill function) for about 3 or 4 minutes but check them out because the cooking depends on the oven and they may burn in a moment. Take off from the oven when Golden and let them cool.



And now the touch of Exquisa classico: mix the cream cheese, aside whip the cream (it has to be very cold) with a spoon (or more if you like) of pink pepper sugar (we preparated it by adding pink pepper grains grounded with the pestle and preserved under glass, it adds a very delicate spicy note, but it goes well also common sugar or vanilla sugar). Incorporate cream into the cream cheese, pour into a sac-à-poche and we are ready to place the dessert. The cream cheese by Exquisa is really the extra touch it should not miss, it makes the cream richer, intense, simply very good.
Place some fillo discs one on an other, decorate with the creamy cream with Exquisa cheese, add some limecurd in the center, some blackberries and repeat with another layer of fillo discs, creamy cream, limecurd, b.berries (add one more layer for a super gorgeus dessert) and finish with lime zests and some peppermint flowers (or Leaves) if you have it. Serve immediately and enjoy in company, with the evening breeze, the sunset lights and some candles on...and good late Summer days to all.
A tip: if you are not pratical to place desserts or you prefer to save time serve the sweet in glasses or cups by creating layers, it will be a millefoglie...destructured.


One more idea, and it's really cool and highly recommended. Frozen the blackberries, blend them just before serving with lemon juice and sugar (blender with a lid if you don't want to have the kitchen worse than the set of The Walking Dead) you'll get a very good and fresh granite, add a bit of lime curd, a spoon of creamy cream, some fresh blackberries, a crunchy fillo discs, lime zests (if you like a drop of vodka) and you will have a very simple dessert to prepare and really really gorgeus, and served in our Moroccan tea glasses they were so cool. To try and try again in all the variations that make us cuddly to enjoy in the evenings of late August (and Beyond) awaiting the new Season (and new recipes).
Notes
.Adjust the sugar doses to your taste by adding it a little at a time and taste.
.Prepare the creamy cream just before placing the dessert and serve immeditely to keep the pasta fillo crunchy.
.If you have some limecurd left you can keep it in the freedge for a couple of days, it will be very good with yogurt, fruit salads, ice-cream but also with toasted bread.
.If you have intolerance you can replace butter, cream and Exquisa classic with lactose-free products (Exquisa senza lattosio).
.Prepare two millefoglie more, they will steal.

Dillo con un Titoo (for You) - the temporary way to be wild & free (or something like that)

Così affermano  Marta (Cammarere) e Giulia (Ciccone) che insieme a Irene (Ronconi) lavorano a Titoo for you, "un progetto creativo, dall'irrefrenabile bisogno di espressione creativa".



Marta, graphic designer con esperienze in web design, comunicazione  e architettura, Giulia architetto divisa fra pilastri, travi e creatività, Irene si occupa di scrittura, comunicazione e promozione di progetti.



Insieme danno vita a un'idea davvero cool, divertente e assolutamente da provare! I Titoo for you sono meglio di una medicina per la felicità, temporanea, s'intende e in un attimo ti sembra di tornare bambino quando non vedevi l'ora di scoprire la magia di quei disegni che con un po' di acqua si trasferivano sulla pelle. Bastava poco per farci divertire, ed eccoci qui, vent'anni dopo (o forse di più) e con qualche capello bianco di troppo, di nuovo col braccio teso ad aspettare curiosi e divertiti. Bastano pochi secondi per dare vita a "giochi di creatività e un pizzico di follia...che in fondo è solo temporanea". Sono belli, resistenti e sembrano veri, sono l'idea perfetta per riempire l'Estate (e oltre) di parole pensieri, disegni e colori, per personalizzare ogni serata ed ogni momento e renderli unici e davvero speciali!


E' ora di baci che sanno di mare, di infiniti cieli stellati, di tramonti profondi e aurore brillanti, è tempo di sentirsi liberi, liberi dai programmi del giorno, liberi di perdersi in bellissimi momenti che saranno i ricordi di una vita. E' ora di essere (temporaneamente o per sempre) liberi e felici (o qualcosa del genere). Dillo con un Titoo...

Together they give Birth to a really cool idea, funny and absolutely to try. Titoos for you are better than a medicine for happiness, temporary, you mean, and in a moment you seem to come back to childhood when you can't wait to find out the magic of those drawings that with some water moved on the skin. And here we are, twenty years later (perhaps more), with some (too much) White hair, again with the arm tense to wait curious and amused. It takes just a few seconds to "make creativity games with a pinch of tempestuous madness, just temporary of course".
They are beautiful, easy to apply, resistant and look real.
The perfect idea to fill the Summer (and Beyond) with words, thoughts, paints and colors to make every moment unique and so special.
It's time for kisses that smell of sea, for neverending starry skies, for deep sunsets and bright dawns, it's time to be free, free from our everyday plans, free to be lost in beautiful moments that will become the memories of life.
