Slow breakfasts/Powered by Exquisa

Il weekend dovrebbe durare più a lungo perché sembra sempre volare in un soffio, più veloce di tutti gli altri giorni. (We really need a day between Saturday and Sunday). Il weekend dovrebbe cominciare con lente colazioni, ed essere fatto di luci chiare che entrano curiose dalle finestre, di t-shirt e pensieri buoni, di profumi che raccontano di una nuova Estate, di fiori freschi, di playlist con le canzoni preferite e di aria leggera che accarezza i capelli ancora spettinati. Il weekend dovrebbe essere pieno di nuovi sapori, avventure e cose golose. Così oggi vi raccontiamo tre idee perfette per la colazione, il brunch (o un pranzo veloce per portare un po' di leggerezza anche durante la settimana), tre modi diversi di usare lo stesso prodotto ottenendo qualcosa di davvero stuzzicante, fresco e leggero. Oggi usiamo "Gran Mousse" di Exquisa, un formaggio morbidissimo (molto fluffy) senza conservanti, senza glutine e molto versatile, perfetto per preparare tante ricette stuzzicanti tra cui quelle di oggi: un gustosissimo chia pudding con coulis di fragole e mirtilli profumato al lime, una deliziosa maqui mousse breakfast bowl con frutta fresca e un coulis di fragole e bacche maqui e infine dei croccanti cream cheese toast con qualche piccolo dettaglio per renderli davvero speciali. Niente di meglio per noi per cominciare la giornata in modo dolce, profumato, sano, colorato e ovviamente davvero facile da preparare. Quindi nella spesa di oggi tanta frutta e un tocco di leggerezza e sapore con Exquisa...



Chia Pudding (Gran Mousse Edition) alle fragole, mirtilli e un tocco di lime.
Il chia pudding è un budino ormai piuttosto famoso soprattutto tra i foodies e foodlovers di Instagram, realizzato con i semi di chia, un super food ricco di proprietà nutrizionali e benefiche come calcio e omega 3, di vitamina C e molto altro, quindi il giusto compromesso per cominciare la giornata in modo sano ma anche goloso e soprattutto non richiede troppo tempo per la preparazione. E il tocco in più di Gran Mousse lo rende davvero speciale, ricco e sfizioso.


Ingredienti (per 2)
200g mirtilli
150g fragole
60g semi di chia
170g Gran Mousse Exquisa
50ml latte di mandorla
zucchero alla vaniglia
succo di limone e lime

Preparare il coulis ai frutti mettendo in padella (antiaderente) le fragole tagliate a pezzi e i mirtilli (tenendone da parte qualcuno per la decorazione) con il succo di mezzo limone (piccolo) e 1 lime e 1 cucchiaio di zucchero alla vaniglia. Portare a bollore, frullare, passare al colino per eliminare i semi e lasciare raffreddare. Una volta ben raffreddato versarlo in coppette o vasetti creando una base per il pudding di circa 1cm e conservare in frigorifero, quindi emulsionare con il frullatore ad immersione 2 cucchiai di Gran Mousse con 1 cucchiaio di coulis avanzato e versare nelle coppette creando un secondo strato e riporre di nuovo in frigorifero. Nel frattempo emulsionare il Gran Mousse rimanente con il latte (di mandorla o quello che preferite, cocco, soia, nocciola o scremato se non volete esagerare con le calorie) e un cucchiaio raso di zucchero alla vaniglia. Versare i semi di chia nel composto e mescolare energicamente per qualche minuto (finche non si depositeranno più sul fondo) e versare nelle coppette. Tre semplici step e la ricetta è pronta, lasciare riposare in frigorifero meglio se per qualche ora  (2/3) coperti con pellicola (preparati il venerdì saranno perfetti per essere il buongiorno del weekend). Decorare con frutta fresca, cereali, miele o a piacere...e servire. Affondare il cucchiaio nei vari strati dalle diverse consistenze e sentire i sapori della frutta, del lime, del formaggio e della vaniglia che si mescolano è un vero piacere, un sorriso per cominciare la giornata con gusto, leggerezza e buon umore.



Maqui (Gran) Mousse breakfast bowl con frutta fresca e coulis di fragole e bacche maqui
Le breakfast bowls sono per noi una vera passione (se ci seguite sui social lo saprete), ciotole piene di latte, yogurt, centrifugati... arricchiti con frutta fresca, cereali, mandorle a seconda dei gusti e delle stagioni...con Gran Mousse di Exquisa abbiamo scoperto un nuovo modo di proporle che sicuramente continueremo a fare (e rifare) per tutta l'Estate (e oltre): una base di mousse leggera e soffice aromatizzata alla vaniglia (perfetta anche per realizzare dessert freschi e leggeri), con un coulis di fragole e bacche maqui (ricche di vitamine e antiossidanti) e frutta fresca e mandorle (così abbiamo anche sistemato il proposito "dovremmo mangiare più frutta").




Ingredienti
180g Gran Mousse Exquisa
70ml latte mandorla
1 cucchiaio di zucchero alla vaniglia
1 foglio di gelatina
per il coulis
100g fragole
40g bacche di maqui essicate
succo di limone + 1 cucchiaio di zucchero
a piacere
frutta fresca e secca

Preparare il coulis di fragole e bacche maqui seguendo il procedimento spiegato nella ricetta del chia pudding e lasciare raffreddare a temperatura ambiente quindi conservare in frigorifero. Nel frattempo emulsionare il formaggio Gran Mousse con il latte e lo zucchero alla vaniglia e a parte immergere il foglio di gelatina in acqua fredda. Versare in padella antiaderente il composto di latte e Gran Mousse e portate a primo bollore a fuoco medio basso continuando a mescolare, quindi spegnere il fuoco strizzare bene il foglio di gelatina e scioglierlo completamente nel mix continuando a mescolare. Versare in ciotole o coppette e lasciare raffreddare a temperatura ambiente prima e in frigorifero poi per almeno 2/3 ore. Prima di servire decorare con il coulis di frutta, frutta fresca, frutta secca, cereali e qualche bacca di maqui (o a piacere). Potete usare questa ricetta anche per realizzare delle cheesecake leggere con una base di biscotto sbriciolato o per deliziosi dessert monoporzione (sostituendo il latte con la panna per un risultato più ricco se preferite) freschi, leggeri e fruttati, perfetti per l'Estate.



Cream cheese Toast alla frutta
I toast a colazione sono una vera coccola alla quale è davvero difficile rinunciare, il profumo del pane tostato è pieno di pensieri, ricordi e sensazioni che trasformano la cucina in un posto di pace e cose buone. Prepararli è davvero semplice e con il tocco di Gran Mousse, della frutta e di qualche piccolo dettaglio diventano un'idea molto bella e buonissima da condividere.

Più che una ricetta è un'idea davvero golosa...basta tostare le fette di pane su entrambi i lati (noi lo facciamo in forno a 220°C con funzione grill, per pochi minuti ma non perdetele di vista, basta un attimo per bruciare il pane), emulsionare il formaggio Gran Mousse con lo zucchero a velo (non diamo dosi, aggiungetelo poco per volta assaggiando fino a raggiungere il giusto equilibrio ricordando che la frutta è zuccherina e che volendo potrete aggiungere sciroppo d'acero, miele, caramello o condimenti a piacere per finire il piatto). Preparare la frutta, spalmare Gran Mousse sulle fette di pane, disporre la frutta e decorare. Noi abbiamo scelto: fragole e aceto balsamico, mango caramellato (nello zucchero di canna grezzo e succo di lime) con foglie di menta del Marocco,  banana e miele, mirtilli e sciroppo d'acero con bacche maqui...ma le combinazioni sono infinite e ci aspetta un'intera Estate di colazioni da provare (riprovare) e ricordare.




A voi la scelta...e l'idea in più che non poteva mancare: se avete davvero poco tempo emulsionare il formaggio cremoso Gran Mousse con latte e miele osciroppo d'acero per ottenere una crema leggera, aggiungere frutta fresca e potrete gustare una breakfast bowl golosa e da preparare in un attimo.



E ancora: frullate gran mousse con latte, miele, frutta e verdura fresca e otterrette dei Cream cheese shake buonissimi, anzi ottimi.. sono diventati il nostro "never without", il formaggio cremoso aggiunto al classico smoothie è davvero un tocco magico che aggiunge sapore ed esalta il gusto. Come si dice? Provare per credere! (Qui una delle tante versioni provate: Gran Mousse, latte di mandorla, miele, mela, albicocche, mirtilli e foglie di spinaci (del nostro orto), buonissimo!)


Note:
.usate frutta matura molto più dolce rispetto a quella un po' acerba
.variate le dosi dello zucchero in base alla dolcezza/acidità della frutta che userete o ai vostri gusti
.se avanzate il coulis di frutta conservatelo in frigorifero per un paio di giorni, sarà perfetto con lo yogurt, il gelato o servito con una fetta di torta soffice
.consultate sempre le dosi giornaliere consigliate dei semi di chia e delle bacche di maqui (di solito vengono riportate sulle confezioni)
.se siete intolleranti al lattosio potete sostituire il formaggio Gran Mousse con il formaggio cremoso Exquisa senza lattosio

The weekend should last longer because it Always seems to fly in a breath, faster than any other days (we really need a day between Saturday and Sunday). Weekend should start with slow breakfasts and made of mornings flooded with bright lightst that comes in from the Windows, of t-shirts and good thoughts, of scents that tell of a new Summer, fresh flowers and playlists of the fave songs and light air that caresses the hair still bowed. Weekend should be full of new flavors, adventures and greedy things. So Today we tell you about three ideas perfect for breakfast, brunch (or for a quick lunch to bring some lighteness into the week ), three different ways to use the same product by getting something really tasty, fresh and light. Today we use Exquisa Gran Mousse, a very soft (and fluffy) cream cheese without preservatives, gluten free and really versatile, perfect for preparing many delicious recipes including today's: chia pudding with a strawberries and blueberries (lime scented) coulis, a delicious maqui mousse breakfast bowl with fresh fruit and maqui berries + strawberries coulis and finally some crunchy cream cheese toasts with a few little details to make them really special. Nothing better for us to start the day in a sweet, fragrant, healthy and colorful way and of course they are so easy to make. So for the todays's shopping list so much fruit and a touch of lightness and taste with Exquisa.
.Chia pudding (Gran Mousse Edition) with strawberries and blueberries coulis lime scented



Chia pudding is a popular pudding especially among the Instagram's foodies and foodlovers, made with chia seeds, a super food with nutritional and beneficial properties as calcium, omega3, vitaminC, the right compromise to start the day in a healthy but also greedy way, it doesn't take too much time for the preparation and the touch of Gran Mousse makes it really special, rich and delicious.
Ingredients (for two)
150g strawberries
200g blueberries
60g chia seeds
170g Gran Mousse by Exquisa
50ml Almond milk (or to taste)
vanilla sugar
lime and lemon juice
Prepare the fruit coulis placing strawberries and blueberries in a non stick pan (holding aside a few for the decoration) with the juice of half a lemon (small) and 1 lime with one tbspoon of vanilla sugar. Bring to a boil, whip, pass to the colander and let cool at room temperature. Then pour it into cups or jars making a base of about 1cm and store in the fridge. In the meantime emulsify two tablespoons of Gran Mousse with about a spoon of the left coulis, pour into cups making a second layer and store in the fridge again. Emulsify the remaining Gran Mousse with Almond milk (or coconut, soy, hazelnut, or skim milk if you don't want to exceed with calories) and a spoon of vanilla sugar. Pour the chia seeds into the mixture and mix vigorously for a few minutes (until they don't depositate on the bottom anymore) and pour into the cups. Three quick steps and you have just to let the puddings rest in the fridge covered with film for a few hours (2/3, prepared on Friday will be perfect as the weekend's goodmorning). Decorate with fresh fruits, cereals, honey...and serve (or to taste). Sink the spoon in the layers with different consistances and feel the flavors of fruits, lime, vanilla and cheese that blend together is a real pleasure, a smile to begin the day with taste, lightness and good mood.
.Maqui (Gran) Mousse breakfast bowl with fresh fruit and strawberry+maqui coulis



Breakfast bowls are a real passion for us (if you're following us on our social you probably know), bowls full of milk, yogurt, smoothies...enriched with fresh fruits, cereals, almonds...to taste and to Seasons. With Gran Mousse we discovered a new way to prepare them that we will surely made and (remade) all Summer long (and more): a base of light and soft mousse scented with vanilla (also perfect to prepare fresh and light desserts) with a coulis of strawberries and maqui berries  (rich in vitamins and antioxidant), fresh fruit and almonds (so we have done even with the good intention "we should eat more fruit").
Ingredients
180g Gran Mousse by Exquisa
70ml Almond milk (or to taste)
1 tablespoon vanilla sugar
1 sheet of fishglue
for the coulis
100g strawberries
40g maqui berries (dried)
1 tbspoon vanilla sugar
to taste
fresh and dried fruit
Prepare the strawberries and maqui berries coulis following the proceed of the coulis in the chia pudding recipe, let it rest at room tempearute and keep it in the freedge. Meanwhile pout the fishglue sheet in cold water. Emulsify with the blender milk, Gran Mousse cheese and sugar and pour in a non stick pan, take to the first boil over law/medium heat stirring constantly then take off the heat, add the fishglue to the mix going on to stir until well mixed. Pour the mix into bowls or cups and let rest at room temperature then keep them in the fridge for at least 2/3 hours. Before serving decorate with fresh fruit, the strawberries and maqui coulis and almonds (or whatever you prefer). You can use this recipe even to prepare light cheesecakes with a base of cookies crumble or for delicous desserts (you can replace the milk with fresh cream for a more rich taste if you prefer). Fresh, light and fruity, perfect for Summer.
.Cream Cheese Toast with fruit



Toasts for breakfast are a real cuddle, the scent of bread is full of thoughts, memories and emotions that make the kitchen a place of peace and good things. Prepare them is so easy and with the Gran Mousse touch, fruit  and a few little details they become a lovely and beautiful idea to share.
Ingredients

More than a recipe it's a delicious idea...you just have to toast some bread on both sides (we use the oven at 200°C grill, it takes just a few minutes but check the bread out while cooking because it burns in a while) emulsify the Gran Mousse cheese with some icing sugar (add it little at a time, taste and adjust the sweeetness if necessary remembering that the fruit has sugar and that if you like, you can also add honey, Marple syrup, caramel...), prepare the fruit you prefer, spread the cheese on bread, place the fruit and season to taste. We choose: strawberries and balsamic vinegar, caramelized mango (with brown sugar and lime juice) with Moroccan mint, banana and honey, blueberries and Marple syrup with maqui berries...but the combinations are endlesses and there's a Whole Summer ahead of breakfasts to prepare (and prepare again) and to remember.

And now you just have to choose and try and...one more idea, if you have not so much time emulsify the Gran Mousse cheese with milk and honey or Marple syrup to obtain a soft cream, add some fresh and dried fruit and you'll get a super fast but very gorgeus breakfast bowl to prepare in a while.
And again blend the Gran Mousse cheese with milk, honey and fresh fruit and veggies and you'll get a so good cream cheese shake, super good...it became our "never without" since we tried it, the cream cheese added to the classic smoothie is a real magic touch that gives a deep taste and flavor. How can we say? Try to believe it. (Here is one of the combination we tried: Gran Mousse, Almond milk, honey, apple, apricoats, blueberries and spinach Leaves (from our veggies garden), so good!).

Notes
.use ripe fruit, it's more sweet
.add more or less sugar to your taste and to the sweetness/acidity of the fruit
.if you have some fruit coulis left keep it in the fridge for about two days, it goes well also with yogurt, ice-cream or with a piece of soft cake
.Always keep attention on the suggested daily doses of chia seeds and maqui bowls (you can usually find them on the packaging)
.if you are lactose intolerant you can replace the Gran Mousse cheese with the Exquisa cream cheese without lactose

Rosso Pomodoro (salad)

Basta una giornata con il cielo terso e le temperature in rialzo per farci sentire l'Estate addosso e quella voglia di sedersi in giardino a guardare il verde e i fiori ovunque, a sentire l'aria più calda sulla faccia e il sole che comincia a scottare, quando le luci si fanno più intense e le ombre creano disegni di foglie sui muri. E l'orto incomincia a produrre, seppur lentamente, con i suoi tempi scanditi dalle stagioni e dalla pioggia...i nostri pomodori non sono ancora pronti (è davvero troppo presto) ma non potevamo resistere al fascino del loro rosso intenso che (insieme al profumo di basilico)  è per noi l'Estate nel piatto, un mix di sapori e odori che scatenano ricordi ed emozioni  che ci regalano sempre un sorriso. Così oggi vi raccontiamo di un'insalata leggera di pomodori pachino grigliati profumati alle erbe, con scaglie di quartirolo lombardo, pinoli tostati e un buon olio extravergine d'oliva. Pochi ingredienti per creare un piatto fresco, ovviamente facile da realizzare, profumato e saporito e perfetto per un pranzo veloce, un'insalata da servire all'aperto con crostoni di pane e una bella compagnia.




Ingredienti
Pomodori pachino (o Piccadilly)
Qartirolo lombardo (o feta o mozzarella fiordilatte)
Pinoli tostati
Aromatiche a piacere (dragoncello, erba pepe, origano, basilico)
sale maldon
pepe nero macinato
olio evo pigliese
pane tostato

Più che una ricetta è un'idea facile e veloce: tagliare a metà i pomodori (privateli dei semi se avete problemi di gastrite o di digestione), disporli su placca da forno ricoperta di carta oleata, salare, pepare, cospargere con un filo di olio evo, con origano fresco ed essicato e dragoncello. Cuocere in forno con funzione grill (o sul barbeque) a 220° per 5 minuti circa o finche leggermente grigliati (non devono essere troppo cotti). Disporre i pomodori (potete servirli caldi, tiepidi ma anche freddi) in un piatto, cospargerli con scaglie di formaggio (il quartirolo è un formaggio tipico lombardo sapido, leggermente acidulo e non particolarmente grasso), aggiungere i pinoli tostati (ricchi di potassio, zinco, calcio, ferro e magnesio ma anche di calorie per cui evitateli o non esagerate se siete a dieta), un trito di erbe aromatiche a piacere (noi usiamo il dragoncello, l'origano fresco, il basilico e l'erba pepe ma se preferite sostituite i pinoli e il trito di erbe con il pesto). Finite il piatto con un filo di buon olio d'oliva (extravergine, noi usiamo spesso l'olio pugliese perché da carattere ai piatti) e con scaglie di sale maldon (o il sale che preferite). Qualche fetta di pane tostato e il piatto in pochi minuti è servito, leggero e profumato, in perfetto Italian lifestyle. E siamo pronti per goderci l'Estate (per la prova costume un po' meno!).





Just a day with a deep blue sky and warm temperature and it looks immediately like Summer with the desire to stay in the garden looking the green and flowers everywhere, to feel the air warmer, and the sun that starts to burn, when lights are more intense and shadows make paints of Leaves on the walls. And the veggies garden starts to produce, slowly, with its times marked by Seasons and rain...our tomatoes are not yet ready (it's really too early) but we couldn't resist to the sharme of their glow red that (with the scents of basil) is absolutely Summer in the plate to us, a mix of flavors and fragrances that set off memories and emotions that Always leave us with a smile. So Today we tell you about this fresh sald with grilled tomatoes Pachino scented with aromatic herbs and served with the Italian quartirolo cheese, toasted pinenuts and a good extravergin olive oil. A few ingredients to prepare a fresh recipe, of course easy to make, scented and tasty and perfect as a quick lunch, a salad to serve outdoor with some toasted bread and friends.



Ingredients
Pachino tomatoes (or Piccadilly)
Quartirolo from Lombardy (or feta or mozzarella fiordilatte)
Toasted pinenuts
Aromatic herbs to taste (we used tarragi , herb pepper, fresh and dried oregano, basil)
Madldon salt
Black pepper
Pigliese evo oil
Toasted bread

More a quick and easy idea than a recipe: cut the tomatoes in a half (remove the seeds if you have gastritis and digestion problems), place them on a baking tray covered with parchment paper sprinkle with salt and ground black pepper, evo oil and herbs: fresh and dried oregano and tarragon. Bake in the oven (grill) at 220°C for about five minutes or untill grilled (but they haven't to be too cooked) or grill them on the barbeque. Place the tomatoes in a plate (warm or cool, as you prefer), add some cheese (we used the quartirolo a typical Italian cheese from Lombardy, savory, slightly acid and not very fat), the toasted pinenuts (rich in potassium, zinc, calcium, iron and magnesium but even in calories so don't add them or add just a few if you're on diet), sprinkle the aromatic herbs finely chopped (we use tarragon, fresh oregano, basil and herb pepper but if you prefer you can replace pinenuts and herbs with an Italian pesto, so good). Finish with a drop of good oil (extravergin, we use a Pugliese one that gives a deep taste to the recipes) and Maldon salt (or the salt you prefer). Add toasted bread and the tomatoe salad is ready, fresh and scented in the perfcet Italian lifestyle. Summer we are ready (not yet for the swimsuite fitting!)

Homemade butter

Ingredienti
250ml panna fresca
una presa di fleur de sel alla vaniglia



Se siete fra quelli che amano l'homemade, questo è il post perfetto e ad alto tasso soddisfazione...fare il burro è molto più semplice di quanto potessimo pensare: disporre un contenitore in freezer per 15 minuti circa (una bottiglia, un barattolo in vetro...) versare la panna (freddissima), chiudere bene (con tappo o coperchio) e shekerare dal basso verso l'alto per circa 10 minuti (note: la panna deve occupare i 3/4 del contenitore, se troppo freddo usate un canovaccio per proteggere le mani), aggiungete del sale, se vi piace il burro salato, noi abbiamo scelto il fleur de sel alla vaniglia (lo abbiamo usato spesso ultimamente nelle nostre ricette, ma è buonissimo e purtroppo sta finendo!) e continuate a shekerare per altri 4 minuti circa. La panna dovrebbe cambiare consistenza diventando molto più densa, a questo punto versare il composto in una terrina e continuare con le fruste elettriche (alla massima potenza) per pochi minuti. Quando la panna si sarà solidificata basterà metterla in un panno pulito e strizzare (per eliminare il siero). Il burro è pronto, non volevamo crederci neanche noi...ed è davvero buono, da spalmare sul pane o per arricchire i vostri piatti (perfetto da spennellare su un filetto o per creare semplici crostini con filetti d'acciughe).



L'abbiamo provato con il pane tostato ( e sul pane tostato quante cose potremmo dire, lo adoriamo, il suo profumo deve avere sicuramente poteri terapeutici) e un trito di erbe aromatiche... in giardino, con il sole e ci è sembrato di essere in vacanza, come in uno dei nostri viaggi quando i pensieri si fanno più leggeri, la vita di tutti i giorni resta a casa ad aspettarti e per un po' ne vivi una diversa fatta di nuove cose, nuovi sapori ed orizzonti, nuovi profumi e nuove prospettive. E pensavamo, con questo maggio di rose e pioggia, anche a un classico ma sempre buonissimo pane, burro e marmellata. Perché in fondo, bisogna sempre continuare a provarci.

Ingredients
250ml fresh cream
an handful vanilla fleur de sel



If you are "homemade" lovers this is the perfect post with a high tax of satisfaction...to make homemade butter is easier than we could ever think: keep a bottle (or a jar) in the freezer for about 15 minutes, pour the cream (very cold) and close well, shake it for about ten minutes from top to bottom (notes: the cream has to take the 3/4 of the bottle or the jar, if too cold use a towel to hold the bottle while shaking), add some salt, if you love salted butter, we choose the vanilla fleur the sel (we're using it quite often recently, but it is so good, and unfortunatly we have almost no more!)and shake it for about 4 minutes more. Cream has to change its consistancy becoming more thick, now pour it in a bowl and mix with electric whisks (at the max speed) for a few minutes. When the cream will be solified just put it in a clean kitchen towel and squeeze to remove the serum. Butter is ready, we couldn't believe it...and it's really good to spread on toasts or to enrich your recipes (perfect to brush a fillet or to prepare simple tarts with anchovies fillets).
We tried it with toasted bread (and about toasted bread we can spent thousands words, we love it, its scents has to have therapeutic powers) and a mix of aromathics herbs, the sun and our garden and it was like to be on Holiday, like in one of our travels, when thoughts becomes lighter, everyday life stay at home waiting for you and you live a different one made of new things, new flavors and horizons, new smells and new prospectives. And we're thinking that this May made of rain and roses is perfect for a classic but Always so good Bread, butter and jam. Because you know, you have Always to keep trying.
