Toast & Cheese (super fast)


Concludiamo Febbraio con un'idea per un pranzo veloce che ci piace tantissimo che può essere lo spunto per tantissime interpretazioni.

We conclude in February with an idea for a quick lunch that we like so much and that can be the starting point for many interpretations.

Tostare le fette di pane in forno a 220°C con funzione grill per 3/4 minuti circa su ogni lato o finche avranno raggiunto la doratura desiderata (tenete sotto controllo la cottura per evitare che si brucino e scegliete il pane che più preferite, noi abbiamo usato il pane Pugliese). Sfornare, passare un filo di olio (evo), aggiungere qualche cristallo di sale, disporre il formaggio morbido a fette (abbiamo usato un formaggio di capra), ancora un po' di olio, miele se vi piace, pepe grattugiato fresco, foglie di erbe aromatiche a piacere (qui maggiorana) e un tocco di colore con i petali di Fiordaliso essicati. Perfetto con un'insalata mista. Bon appetit!


Toast the slices of bread in the oven at 220°C with function grill for about 3/4 minutes on each side or until it reaches the browning you prefer (keep an eye on cooking to prevent an overbrowing and choose the bread you prefer, we choose an Italian Pugliese bread). Remove from the oven, pour a bit of oil (evo), add some crystals of salt, place a sliced soft cheese (we choose a goat cheese), a bit more of oil, honey if you like, fresh ground pepper, aromatic herbs Leaves to taste (marjoram here) and to give a touch of color add dried Cornflower petals. Perfect with a mixed salad. Bon appetit!

I petali utilizzati sono di Fiordaliso, sono secchi e non hanno un particolare sapore ma sono perfetti per aggiungere un pizzico di Primavera al piatto (zuppe, dessert o altro), potete sostituirli con fiori eduli freschi o meglio ancora con i fiori delle erbe aromatiche, quando disponibili.

The petals we used are of Cornflowers, they are dried and they haven't a particular flavor but they are perfect to give a touch of Springs to your dishes (soups, desserts and more), you can replace them with edible fresh flowers or even better with the aromatic herbs flowers, when in season.

Dark Gianduia Chia Pudding


"Please stay a child somewhere in your heart"

Oggi comiciamo con la frase di una canzone (Original of the Species-U2) perché questa è una ricetta semplicissima: basta mescolare gli ingredienti e aspettare la magia e scoprirsi cuoriosi nell'attesa ci ha fatto sentire un po' bambini. E potremmo parlarvi della vita, del bello delle cose semplici, del guardare le cose con ingenua curiosità...e invece vi raccontiamo qualcosa dei semi di chia, o Salvia Hispanica (se ancora non li conoscete)...(può partire in sottofondo la sigla di Quark, grazie): sono considerati un super food dalle proprietà nutrizionali infinite, erano la base dell'alimentazione di antiche popolazioni come gli Aztechi, sono ricchi di fibre, Omega3, proteine, calcio, fosforo, sono antiossidanti, super energetici e molto altro.
Ve li proponiamo in versione dolce in un Chia Pudding alla crema al gianduia nero (buonissimo) con yogurt e frutta (perfetti anche per zuppe e minestre).

Si consiglia di non superare la dose di 15g di semi di chia al giorno.


Today we begin with the phrase of a song (Original of the Species-U2) because this recipe is very simply: you just mix the ingredients and wait for the magic and find yourself curious while waiting made us feel like a child. And we should talk about life, about the beauty of simple little things, about the genuine curious eyes...and instead we tell you something about the Chia seeds, or Salvia Hispanica (if you don't still know them): they are considered a super food by endless nutritional properties, they are rich in fiber, Omega3, protein, phosphorus, calcium, they are antioxidants, a source of energy and much more. We propose them in a sweet version, a Pudding with (a delicious) dark chocolate and hazelnuts cream (perfect also for soups).

It is advisable not to exceed the dose of 15g of chia seeds daily.


Ingredienti (per 1 chia pudding)
15g semi di chia
70/80ml circa di latte di riso
1 cucchiaino di crema al gianduia nero
semi di 1/4 di bacca di vaniglia
yogurt a piacere
cacao in polvere a piacere
mezza pera
2 cucchiaini di malto di riso

Preparare il chia pudding è davvero facile: versare i semi di chia un un vasetto con il latte (preferibilmente vegetale: riso, mandorla...) con un dolcificante naturale (noi abbiamo scelto il malto di riso) e mescolare bene per qualche minuto. Lasciare riposare per pochi minuti e mescolare di nuovo finche i semi non si saranno distribuiti uniformemente. (I semi rilasciano una sostanza addensante perciò più latte aggiungete meno denso sarà il pudding).



E' possibile insaporire il pudding a piacere, noi abbiamo aggiunto i semi di vaniglia e la crema di gianduia nero mescolando fino ad ottenere un composto ben amalgamato. Lasciare riposare 4 ore circa in frigorifero e il pudding è pronto (non ha la consistenza del budino al quale siamo abituati ma di una crema molto densa). Potete gustarlo così o aggiungere qualche dettaglio per renderlo ancora più goloso come lo yogurt bianco, una spolverata di cacao e frutta in pezzi (in questo caso la pera). Fresco, super energetico e buono. Provatelo con la frutta che preferite, anche frullata e magari qualche cereale croccante...and enjoy!


Ingredients (for 1 chia pudding)
15g chia seeds
70/80ml (about) of rice milk
1 teaspoon of dark gianduia cream
1/4 of vanilla seeds
yogurt to taste
cocoa powder
1/2 pears to taste
2 teaspoons of rice malt

To prepare the chia pudding is very easy, pour the chia seeds and the milk (better if a vegetable one like rice or Almond milk) with a natural sweetener (we have choosen the rice malt) and stir well for a few minutes. Let stand for a few minutes more and stir again until the seeds will be well distributed. (The seeds release a densifying substance, the more milk you add the less your pudding will be dense).



You can flavor the pudding to your taste, we add the vanilla seeds with a bit of dark chocolate and hazelnuts cream, add and stir well until is all well mixed. Just let it sit in the freedge for about 4h and your pudding will be ready. You can have it as well or add some other details to make it even more delicious as plain yogurt, cocoa powder and fruit pieces (we choose the pear). Cool, super power and good. Try it with the fruit you prefer, even mashed, maybe with some crunchy cereals and enjoy!

Avocado Toast


Ad essere onesti l'avocado non è uno dei nostri frutti preferiti, ma con questa ricetta lo abbiamo rivalutato...semplice, veloce e davvero buona...in più l'avocado ha tante proprietà benefiche: aiuta a contrastare il colesterolo, ha poteri antinfiammatori ed è spesso usato nella cosmesi. (Certo non è un prodotto a Km 0 ma ogni tanto si può fare "un passo più in la" e dare spazio anche a ciò che non appartiene al proprio territorio).

To be honest the avocado is not one of our favorite fruits, but this recipe made us reevaluate it...simple, easy and really good...and more the avocado has many beneficial properties: it helps to contrast the cholesterol, it has anti-inflammatory powers and it is often used in cosmetics.


Ingredienti
pane integrale a fette
1 avocado (per circa 4/5 fette di pane)
olio extravergine d'oliva
cristalli di sale
succo di limone
pepe nero macinato
miele (d'acacia)
senape

Tostare le fette di pane integrale (o quello che più preferite) in forno a 220°C con funzione grill su entrambi i lati finche avranno raggiunto la doratura desiderata. Nel frattempo preparare il condimento shekerando in un vasetto l'olio (2/3 cucchiai circa), il sale, qualche goccia di limone, il pepe macinato, il miele (un cucchiaino circa) e la senape (un cucchiaino circa), assaggiate e se necessario correggete il sapore a vostro gusto. Pelare l'avocado (deve essere maturo, l'avocado Hass è uno dei migliori) e affettarlo finemente (potete servirlo a fette oppure creare una purea schiacciandolo con la forchetta).



Spennellare il pane con il condimento (se spennellato il pane mantiene meglio la croccantezza), disporre l'avocado a fette o la purea di avocado, finire il piatto con un filo di condimento, cristalli di sale, pepe nero macinato e qualche goccia di limone ed è pronto per essere servito (potete anche aggiungere prezzemolo fresco, peperoncino fresco a fette, un po' di formaggio cremoso...).
Davvero stuzzicante il contrasto tra il croccante del pane e la morbidezza dell'avocado, la sua dolcezza e il profumo del condimento lo rendono un piatto fresco e appetitoso...ci fa pensare alla Primavera!
Perfetto per una bella colazione o un pranzo veloce...enjoy!



P.S. L'avocado una volta affettato tende a scurire, preparatelo appena prima di servire e non dimenticate il limone che è antiossidante. 



Ingredients
slices of wholemeal bread
avocado (1 for 4/5 slices)
extravergin olive oil
mustard
Crystal salt
ground black pepper
honey (acacia)
lemon juice

Toast the slices of wholemeal bread (or the one you prefer) in the oven at 220°C with the function grill on both sides until you have reached the desidered Golden brown. Meanwhile prepare the seasoning by shaking in a jar the oil (about 2/3 tbspoons) with salt,  ground black pepper, honey (about a teaspoon), mustard (about a teaspoon) and few drops of lemon, try it and adjust the flavour to your taste. Peel the avocado (it has to be ripe, the avocado Hass is very good), slice it finely or make a mash by crushing with a fork.



Brush the bread with the seasoning (brushing will keep better the crunchy of the bread) arrange the avocado in slices, or mash, finish the plate with Crystal salt, black pepper, a bit more of seasoning and a few drops of lemon. The dish is ready but you can add fresh parsley, fresh chili, or cream cheese...
The contrast between the crunchy bread and the soft avocado is really gorgeus and ist sweetness with the fragrance of the sesoning make it fresh and very tasty...it makes us think about Spring!
Perfect for a nice breakfast or a quick lunch...enjoy!



P.S. The avocado tends to darken when sliced, prepare it just before serving and don't forget the lemon that is antioxidant.
