The Sinful Chocolate Bars



L'altra sera è arrivata la prima nebbia della stagione, quella che ti fa venire voglia di stare in casa sul divano a sgranocchiare qualcosa di dolce...the sinful chocolate bars sono perfette per queste serate d'Autunno... da condividere con amici (e parenti). Cioccolato al latte e fondente (giusto per non farsi mancare nulla) con noccioline zuccherate (alle quali non sappiamo resistere) e la salsa al caramello salato a rendere il tutto super goloso. Le nostre sono finite in un attimo...
P.S. Consigliamo almeno un'ora di attività fisica pre peparazione e post assaggio. Sono davvero peccaminose...

Last night came the first fog of the Season, one that make you want to stay at home on the sofa with something sweet to nibble...the sinful chocolate bars are perfect for this Autumn nights...to be shared with your friends (and family). Milk and dark chocolate (just not to miss anything) with sugared peanuts (wich we can't resist) and the salted caramel sauce to make everything super luscious. Our ended in a moment...
P.S. We suggest at least one our of physical activity pre peparation and post tasting. They are so sinful...


Ingredienti (per 8 barrette con stampo in silicone Silikomart)
200g cioccolato al latte
200g cioccolato fondente
sale
arachidi zuccherate

Per la salsa al caramello salato
100g zucchero
100ml panna fresca
sale

Cominciamo preparando la salsa al caramello salato: sciogliere lo zucchero in padella a fuoco basso senza mescolare. A parte scaldare la panna a fuoco basso, quando lo zucchero sarà completamente sciolto e il caramello avrà un colore ambrato aggiungere una presa di sale e la panna a filo, continuando a mescolare fino a d ottenere una salsa densa, lucida e senza grumi. Versare la salsa in una salsiera e lasciare raffreddare (ricordiamo di non assaggiare il caramello durante la preparazione, è ustionante!).



Sciogliere il cioccolato al latte e quello fondente (abbiamo usato un 50%) separatamente a bagno-maria (o il cioccolato che preferite) con un pizzico di sale (perfetto quello in scaglie)per esaltarne il sapore.
(Apriamo una parentesi: lavorare il cioccolato non è semplice ma per una preparazione casalinga consigliamo di non superare i 40°C durante la fusione del cioccolato e di versare subito il cioccolato fuso negli stampi, il temperaggio richiede abilità ed esperienza e se non viene fatto nel modo corretto col tempo il burro di cacao tenderà ad affiorare in superficie creando una patina bianca, perciò vi consigliamo di consumare le vostre barrette nei giorni successivi alla preparazione).



Disporre qualche nocciolina negli stampi (perfettamente asciutti), versare un po' di cioccolato fuso a coprire la base, aggiungere giusto un po' di salsa al caramello (non troppa) e completare con il cioccolato fuso fino al bordo dello stampo. Decorare con le noccioline zuccherate e la salsa al caramello. Sbattere leggermente lo stampo sul piano da lavoro per eliminare eventuali bolle d'aria e lasciare riposare a temperatura ambiente per almeno 20 minuti e in frigorifero per altri 20 minuti circa.



Rimuovere le barrette dagli stampi e servire magari aggiungendo ancora un po' di golosissima salsa al caramello salato.
Sono perfette da condividere con gli amici, magari con il camino acceso, un buon caffè e un goccio di grappa o wisky se piace. Il successo della serata è assicurato...non sono rimaste nemmeno le briciole.
Sono anche un'idea regalo davvero carina per i più golosi, in vista del periodo delle feste (non manca tanto!)...con un bel pacchetto e un pensiero sincero saranno apprezzatissime. Enjoy...

P.S. Qualcuno si à anche leccato le dita. E se vi avanza la salsa al caramello provatela nel caffè, con un po' di yogurt, sul gelato o con una fetta di torta alle noci.


Ingredients (for 8 bars made with the silicone mold by Silikomart)
200g milk chocolate
200g dark chocolate
salt
sugared peanuts

For the salted caramel sauce
100g sugar
100ml fresh cream
salt

Let's start preparing the salted caramel sauce: melt the sugar in a pan over low heat without stirring. Apart heat the cream over low heat, when the sugar is completely dissolved and the caramel will have an amber color add a pinch of salt and the cream, little at a time, stirring constantly until the sauce is thick, glossy and with no lumps. Pour the sauce into a greavy boat and let cool (remember to nost taste the caramel while preparing, is scalding!).



Melt the milk chocolate and the dark one (we used a 50% one) separetly in a bain-marie (or the chocolate you prefer) with a pinch of salt (the crystals salt are perfect) to eenhance the flavor. (We open a parenthesis: working chocolate is not easy but for home preparation we suggest not to exceed a temperature of 40°C during the melting of the chocolate and pour it into the molds immediately. The tempering requires skill and experience, if the chocolate is not melted to the right temperature after time the cocoa butter tends to rise to the surface, creating a White coating. We suggest to consume them in the few days following the preparation.)



Put some sugared peanuts into the molds (completely dry), pour a little chocolate covering the base and add some caramel sauce (just a few), complete with chocolate up to the edge of the mold, decorate with sugared peanuts and the salted caramel sauce. Lightly beat the mold on the working table to eliminate any air bubbles, allow to cool to room temparature for at least 20 minutes and put in the fridge for about 20 minutes more.



Remove the bars from the mold and serve maybe adding some more luscious caramel sauce. They are perfect to be shared with friends, maybe with the fireplace, a good coffee and a shot of wisky or grappa if desidered. The success of the evening is guaranted, we have not even the crumbs. They are also a really lovely gift idea for the sweet tooth, for the festive period (not so far!) with a nice package and a sincere thought they will be really appreciated. Enjoy...


P.S And someone has even licked the fingers! And if you have some caramel sauce left try it with coffee, yogurt, ice-crime or a slice of crunchy nutscake.

Pasta fresca ai porcini con salvia croccante e formaggio grana / Porcini mushrooms fresh pasta with crunchy sage and Parmesan cheese


La pasta fatta in casa ha qualcosa di romantico (non credete?), così domenica scorsa ci siamo messi all'opera, visto che il tempo era un po' uggioso ed è nato questo piatto, con un meraviglioso profumo di funghi, delicatamente accompagnato dall'aroma della salvia croccante, del burro nocciola e del grana...semplicissimo, come piace a noi, ma davvero buono. Un piatto dal mood tutto italiano!

Homemade pasta has something romantic (don't you think?), so last Sunday we started work, since the weather was a little gloomy and this dish born, with a wonderful flavor of porcini mushrooms, delicately accompanied by the aroma of crunchy sage, brown butter and Parmesan cheese...so simply, as we like, but really delicious. A dish mood all Italian!

Ingredienti (per 4 persone circa)
400g farina 00
4 uova intere
1 tuorlo
40g porcini secchi
(un pizzico di sale)

burro
foglie di salvia
formaggio grana grattugiato
sale e pepe

Frullare i funghi porcini secchi fino a tritarli molto finemente. Disporre la farina a fontana, creare una cavità nel centro e aggiungere le uova (intere più il tuorlo), i funghi frullati e un pizzico di sale (facoltativo). Mescolare gli ingredienti con una forchetta e continuare a impastare con le mani fino ad ottenere un panetto liscio e compatto. Lasciare riposare l'impasto per qualche minuto coperto dalla pellicola.
Prelevare parte dell'impasto e stendere con il mattarello o a macchina fino ad ottenere lo spessore desiderato (ricordando di infarinare bene durante l'operazione per evitare che attacchi). Tagliare le sfoglie ottenute nella forma desiderata (a macchina o a coltello). Lasciare riposare la pasta per qualche ora appesa o ben distanziata su un ripiano infarinato.


Abbiamo servito questa pasta con salvia croccante, burro nocciola e grana (Tipico Lodigiano) per esaltare e non coprire il sapore dei funghi.
Sciogliere il burro in padella (dosi a piacere) con foglie di salvia ben lavate ed asciugate fino ad ottenere il classico burro nocciola (dorato e profumatissimo), nel frattempo cuocere la pasta in abbondante acqua salata (meglio se con un goccio di olio per evitare che si attacchi una volta scolata). Togliere le foglie croccanti di salvia dalla padella e tenere da parte. Aggiungere sale e pepe al burro, scolare la pasta (il tempo di cottura dipende dallo spessore, una pasta fresca sottile cuoce in circa 2/3 minuti) e saltare in padella con il burro, aggiungere a fuoco spento abbondante grana grattugiato e un mestolo circa di acqua di cottura della pasta e amalgamare bene fino ad ottenere una crema (se necessario aggiungere più acqua).


Disporre nei piatti, aggiungere le foglie croccanti di salvia , e ancora un po' di grana e pepe (se piace). Un piatto semplice ma confortante che invade la casa di profumi invitanti, un modo perfetto per dare il benvenuto alla famiglia o agli amici una domenica a pranzo.

Qualche consiglio:
.se stendete la pasta con il mattarello lo spessore deve essere uniforme
.se tirate la pasta a macchina ripiegate l'impasto su stesso e infarinatelo prima di passarlo
.tenete l'impasto sempre coperto con pellicola per non farlo seccare
.per accentuare il sapore dei funghi frullatene ancora un po', giusto qualche grammo e aggiungete la polvere ottenuta al burro nocciola prima di scolarvi la pasta
.usate diversi tipi di salvia se ne avete a disposizione, la salvia viola per esempio è molto bella
.aggiungete qualche fiore di erbe aromatiche per aggiungere colore e sapore (qui in foto fiori di rosmarino, dragoncello ed erba pepe)
.se vi avanza della pasta tagliatela in piccoli pezzi e aggiungetela alle zuppe o servitela in brodo

Ingredients (for about 4 persons)
400g flour 00

40g dried porcini mushrooms
(a pinch of salt)

sage Leaves
grated Parmesan cheese

Blend the dried porcini until you get a powder with very fine pieces of mushrooms. Place the flour "fountain" and create a cavity in the center, add the eggs (4 Whole + 1 yolk), the blended porcini and a pinch of salt (optional). Mix the ingredients with a fork and continue to knead with your hands until the dough is smooth and compact. Let the dough rest covered with film (to prevent dry) for a few minutes. Take the dough and roll out with the rolling pin or with the machine (for fresh pasta) until you get the desired thickness (remembering to flour the sheets to prevent sticking). Cut the dough into the shape you prefer (with the machine for pasta or with the knife) and let stand for a few hours hanging or well spaced on a floured counter.


We served it with crunchy sage, brown butter and Parmesan cheese (Tipico Lodigiano) to accentuate and not cover the taste of mushrooms. Melt the butter (doses to taste) with sage Leaves well washed and dried to obtain the classic brown butter (Golden brown and so scented), meanwhile cook the pasta in salted boiling water(better if with a drop of oil to prevent sticking once drained). Remove the crispy sage Leaves and keep aside, add to the butter salt and pepper, drain pasta (time cooking depends on the thickness, a thin fresh pasta cooks in about 2/3 minutes) and toss in a pan with the brown butter, add a good dose of grated Parmesan cheese and About a ladle of pasta cooking water and mix well until creamy (add more water if necessary).


 Arrange on plates, add the crunchy sage Leaves, a bit more of grated cheese and pepper (if desired). A simple dish but comforting that invades the house with inviting smells, a perfect way to welcome family or friends on a Sunday lunch.

Some advices:
.if you roll out the dough with the rolling pin you should obtain a uniform thickness
.if you pull the dough with the machine fold the dough over on itself and flour before passing
.keep the dough Always under film while working
.to accentuate the flavor of porcini blend a little more of mushrooms, just few grams and add the powder obtained into the brown butter before draining the pasta
.use different types of sage if you have, the purple sage is really lovely
.add aromathic herbs flowers to give a touch of colors and flavor, in the pic Rosemary, herb pepper and tarragon flowers
.if you have some pasta left cut it into small pieces and serve with soups or with broth
