Humus di ceci + basilico + pinoli tostati / Chickpeas humus + basil + toasted pinuts (Fats & Gorgeus)

Oggi inauguriamo il nuovo spazio "Fast & Gorgeus" con ricette e consigli da realizzare in pochi minuti. Speriamo possano ispirarvi, stuzzicarvi e esservi d'aiuto quando avrete bisogno di qualcosa di veloce e goloso da preparare. Cominciamo con due post: due modi di essere uno yogurt greco, sweet and salty edition.

Ingredienti (per circa 4 persone)
250g ceci lessati
2 cucchiai circa yogurt greco
succo di limone
sale
olio extravergine d'oliva
foglie di basilico
pinoli tostati

Aperitvo all'improvviso? Perché non servire un facile e veloce humus di ceci con basilico (adoriamo il suo profumo, Estate allo stato puro, lo metteremmo ovunque !) e pinoli dorati e tostati? Fresco, leggero e davvero buono, vi lascerà il tempo di godere della compagnia dei vostri ospiti.

Frullare (con il frullatore ad immersione) i ceci già lessati (di buona qualità)con lo yogurt (quello greco è perfetto perché è molto cremoso), qualche goccia di limone e il sale. Aggiungere a filo l'olio (circa un cucchiaio) e continuare a frullare fino ad ottenere una crema liscia. Assaggiare e aggiustare con più sale o limone se necessario (secondo i vostri gusti).
Aggiungere qualche foglia di basilico tritata con coltello di ceramica o con le mani (per evitare che si ossidi) e mescolare. Tostare qualche pinolo in padella e  farli cadere a pioggia sul vostro humus.


Pronto in cinque minuti (forse meno...)!
Lo serviamo in un vasetto recuperato con il nostro cucchiaio preferito (di Giovelab) e lo portiamo a tavola con un vecchio setaccio... aggiungete qualche cruditè, un buon olio evo, sale in scaglie, pane tostato, crostini...del buon vino bianco freddo...e siete pronti per godervi il tramonto. Enjoy...

Cocoa Crumble + Yogurt Mousse + Sweet Cherries


Ingredients (for about 4 persons)
250g bolied chickpeas
about 2 tbspoons greek yogurt
lemon jiuce
salt
extravergin olive oil
basil Leaves
toasted pinuts

Aperitif suddenly? Why not serve a fast and easy chickpeas humus with basil (we love its smell, Summer pure state, we would put it everywhere!) and toasted Golden pinuts? Fresh, light and really good, it will leave you the time to enjoy the company of your guests.

Whisk (with the immersion blender) boiled chickpeas (good quality) with the greek yogurt (perfect for this preparation 'cause it is really creamy), a few drops of  lemon and salt. Add little at a time the oil (about a tbspoon) until obtaining a smooth cream. Taste and adjust with more salt or lemon (according to your taste).
Chop few basil Leaves with a ceramic knife or your hands (to avoid oxides) add into the chickpeas cream and mix. Toast in a pan some pinuts and sprinkle them on your humus.


We serve it in a recovered jar with our favourite spoon (by Giovelab) and bring it to table with an old sifter...add some raw veggies, a good extravergin olive oil, salt flakes, toasted bread, crackers, a good cold White wine...and you are ready to have relax in the sunset. Enjoy...

Ingredienti (per 4 persone)
10 biscotti circa (digestive)
2 cucchiai di cacao in polvere
un pizzico di sale
20g burro fuso
200ml panna fresca
200g yogurt greco
2 cucchiai zucchero a velo
ciliegie
succo di limone
zucchero alla vaniglia

Un dolce fresco, goloso e soprattutto veloce fa sempre comodo quando si ha poco tempo per preparlo!  

Lavare e tagliare le ciliegie a metà (tenerne qualcuna intera per la decorazione), togliere il nocciolo, aggiungere succo di limone, zucchero alla vaniglia, mescolare e lasciare riposare.
Sbriciolare i biscotti (digestive o quelli che preferite), aggiungere un pizzico di sale e il cacao in polvere (meglio se amaro per avere un buon contrasto con la mousse e le ciliegie) e mescolare bene. Aggiungere il burro fuso, amalgamare e disporre sul fondo di bicchieri, vasetti, tazzine, coppe o ciò che preferite.
Montare la panna (fredda) con lo zucchero a velo e aggiungere poco alla volta lo yogurt greco (buonissimo e molto cremoso), se necessario aggiustare la dolcezza aggiungendo altro zucchero.
La mousse di yogurt prevede anche i fogli di gelatina per renderla più compatta, ma è buonissima anche senza e ovviamente più veloce da preparare. Per un dessert più leggero potete usare solo lo yogurt con un po' di miele.



Versare la mousse sul crumble al cacao e decorare con le ciliegie e il loro succo. Conservare in frigorifero fino al momento di servire.
Davvero pronto in pochi minuti e da reinterpretare in mille modi, secondo i vostri gusti e i prodotti di stagione (buonissimo anche con coulis caldo di frutta e frutta secca caramellata)...da gustare in compagnia come leggero fine pasto (ma anche come golosa merenda). Enjoy...

Humus di Ceci + Basilico + Pinoli Tostati


Ingredients (for about 4 persons)
about 10 cookies (digestive)
2 teaspoons cocoa in powder
a pinch of salt
20g butter
200ml fresh cream
200g greek yogurt
cherries
lemon juice
vanilla sugar

A fresh, delicious and overall fast dessert is Always helpful when you have just few time to prepare it!

Clean and cut the cherries in half (leaving some Whole for the decoration)
remove the core, add a few drops of lemon juice and a little bit of vanilla sugar, stir and let stand.
Crumble the cookies (the digestive or your favourite), add a pinch of salt and the cocoa powder (preferably bitter for a good contrast with the mousse and cherries) and mix well. Add the melted butter, amalgamate and place in the bottom of glasses, jars, cups, bowls or whatever you prefer.
Whip cream (cold) with icing sugar and add gradually the greek yogurt (so good and really creamy), taste and if necessary adjust the sweetness. The yogurt mousse also provides the gelatin sheets for its praparation, to make it more compact, but it is delicious even without and obviously faster. For a more lighter dessert you can use only the yogurt with a bit of honey.


Pour the mousse on the cocoa crumble and decorate with cherries and their juice. Keep in the refrigerator until serving.
Really ready in a few minutes and to be reinterpreted in many ways, according to your taste and to the season products (really delicious with warm fruits coulis and caramelled dry fruits too)...to eat with friends as a mild end of the meal (but for a gorgeus snack too). Enjoy...

Poppy seeds lemon waffles con mirtilli / Poppy seeds lemon waffles with blueberries


Come promesso non poteva mancare la versione dolce dei waffles... più croccanti fuori e soffici all'interno perché cotti in forno,  e davvero golosi... con yogurt, mirtilli glossy e semi di papavero.

Lemon ricotta waffles con insalata di zucchine

As promised it could not "miss" the sweet version of waffles...more crunchy outside and soft inside because cooked in the oven, and really delicious...with yogurt, glossy blueberries and poppy seeds.

Lemon ricotta waffles with zucchini salad


Ingredienti (per circa 6 waffles con stampo in silicone)
2 uova
200g farina per dolci
1/2 cucchiaio di lievito per dolci
2 cucchiai di zucchero alla vaniglia
1 pizzico di sale
scorza di 1 limone
150ml latte
50g burro fuso (+ per spennellare)
semi di papavero

mirtilli
yogurt
succo di limone
zucchero a velo

Setacciare la farina, aggiungere lievito, sale, scorza di limone e semi di papavero (qb) e mescolare bene.
Aggiungere ai tuorli il burro fuso (assolutamente freddo e a filo) mescolando con una frusta, unirvi il latte (meglio se intero) poco alla volta continuando a mescolare finche ben amalgamato. Unire la farina al latte coi tuorli mescolando con una frusta per evitare che si formino i grumi. A parte montare i bianchi a neve ben ferma e unirli al composto mescolando con una spatola dal basso verso l'alto.


Versare il composto nello stampo in silicone o nell'apposita piastra, precedentemente spennellati con burro morbido.
Se usate la piastra per waffles versate il composto e lasciare cuocere per qualche minuto, saranno pronti quando ben dorati, rimuoveteli aiutandovi con uno stecco o la punta di un coltello per non scottarvi.


Se usate lo stampo in silicone ecco alcuni consigli:
.mettere lo stampo vuoto in forno durante il preriscaldamento (aiuterà la cottura);
.spennellare con burro morbido lo stampo caldo prima di versare il composto (lo stampo è antiaderente ma il burro rende la superficie dei waffles più dorata e croccante);
.durante la cottura posizionare lo stampo nella parte più bassa del forno;
.preriscaldare il forno a 220° C (ventilato) e cuocere per 15 minuti, se necessario continuare la cottura (statico solo sotto) finche ben dorati.


Serviteli caldi con ciò che vi stuzzica di più...noi li abbiamo provati con yogurt greco e mirtilli  ( fatti in padella con un po' di succo di limone e zucchero a velo, bastano pochi minuti a fuoco medio e saranno lucidi e golosi...da provare anche con il gelato)...buonissimi!
Perfetti per una ricca colazione o un brunch in compagnia. Enjoy...

Abbiamo usato lo stampo in silicone per waffles di Silikomart


Ingredients (for about 6 waffles with silicone mold)
2 eggs
200g cakeflour
1/2 tbspoon baking powder
2 tbspoons vanilla sugar
a pinch of salt
lemon zest
150ml milk
50g melted butter (+ for brushing)
poppy seeds

blueberries
yogurt
lemon juice
icing sugar

Sift the flour, add baking powder, salt, lemon zest, poppy seeds (as enough) and mix well.
Add to the yolks the melted butter (absolutly cold!) little at a time continuing stirring with a wisk and add milk (better if Whole milk) little at a time continuing stirring until well amalgamate. Add the flour to the milk and yolks stirring with a whisk to prevent lumps. Mount the whites until stiff and incorporate to the mix stirring with a spatula from bottom up.


Pour the mixture into the silicone mold or into the waffles plates previously brushed with soft butter.
If you use plates your waffles will be ready in a few minutes, take them out when Golden brown with the aid of a stick or the tip of a knife to avoid scalds.


 If you use the silicone mold here are some tips:
.put the empty mold in the oven during preheating (it helps the cooking of waffles);
.brush the hot mold with soft butter before pouring the mixture (the mold is nonstick but the butter will help the browning and will make the surface more crunchy);
.position the mold in the lower part of the oven during cooking;
.preheat the oven at 220°C (fan) and bake for about 15 minutes, if necessary continue cooking (static just bottom) until Golden brown.


Serve them hot with what excites you more, we tried them with greek yogurt and blueberries (put them on a pan with lemon juice and icing sugar and cook on medium heat just for a few minutes, they will be glossy and really delicious, to taste with ice-cream too)...so good!
Perfect for a rich breakfast or a brunch with friends. Enjoy...
