Frozen Yogurt Mini Ice-Cream gusto fragola / strawberry flavor



Frozen Yogurt: fresco, leggero e sembra gelato. Ve lo suggeriamo al gusto fragola ma potete farlo in mille modi. Perfetto per il weekend (e oltre)...sperando che torni il sole!

Frozen Yogurt: fresh, light and it tastes like ice-cream. We suggest you to strawberry flavor but you can make it in a thousand ways. Perfect for the weekend (and Beyond)...hoping to come back the sun!.

Ingredienti (per circa 10 mini frozen yo.)
250g salsa di fragole o 250g fragole frullate
350g yogurt bianco
a piacere
1 cucchiaio di zucchero alla vaniglia

Ricetta della salsa alle fragole
Come fare lo zucchero alla vaniglia (semplicissimo)

Preparare la salsa alle fragole e lasciare raffreddare (è davvero semplice ma se preferite una versione più veloce e leggera frullate 250g circa di fragole, meglio se con un cucchiaio di zucchero a velo per assorbire l'eventuale acqua dei frutti, e passatele al setaccio per eliminare i semi). Aggiungere lo yogurt alla salsa (quello che preferite, noi abbiamo usato uno yogurt intero) e amalgamare con le fruste elettriche. A piacere potete aggiungere un cucchiaio di zucchero alla vaniglia (o normale) per correggere l'acidità dello yogurt secondo i vostri gusti.


Versare il mix nella gelatiera e lasciare lavorare la pala per circa 20 minuti. Versare il frozen yogurt negli stampi da gelato o nelle coppette e conservare in freezer fino al momento di servire.
Se non avete la gelatiera amalgamare la salsa allo yogurt (zucchero a piacere) con le fruste elettriche, riporre il mix in freezer per almeno 30 minuti e amalgamare di nuovo con le fruste finche cremoso. (Questa procedura andrebbe ripetuta almeno due volte per evitare che si formino i cristalli di ghiaccio all'interno). Versare il frozen yogurt negli stampi da gelato o nelle coppette e conservare in freezer fino al momento di servire.


Più light del gelato ma ugualmente goloso. Perfetto per una festa o da conservare in freezer per uno snack buono e sano. Provatelo nei gusti che preferite.

Ingredients (for about 10 mini frozen yo.)
250g strawberries sauce or 250g blended strawberries
350g White yogurt
to taste
1 tablespoon vanilla sugar

How to make vanilla sugar (so easy)

Prepare the strawberries sauce and let it cool (is really simple but if you prefer a more light and fast version just blend the strawberries, better if with a tablespoon of icing sugar ro absorb the water of the fruits, and sieve to remove seeds). Add White yogurt (the one you prefer, we used a Whole White) to the strawberries sauce and mix well with the electric whisk. To taste you can add a tablespoon vanilla sugar (or normal) to adjust the sour of yogurt.


Pour the mixture into the ice-cream maker and let it work for about 20 minutes. Pour the frozen yogurt into molds or cups and store in freezer until you are ready to serve.
If you don't use the ice-cream maker mix the strawberries sauce and yogurt (sugar to taste) with the electric whisk, store the mixture in the freezer for at least 30 minutes and mix again with the whisk to make it creamy. (This procedure should be repeated at least twice to prevent ice-crystals inside). Pour the frozen yogurt into molds or cups and store in freezer until you're ready to serve.


More light than ice-cream but equally delicious. Perfect for a party or to keep in the freezer for a good and helathy snack. Try it in the flavor you prefer.

Cupcakes alla crema di carote con cardamomo vaniglia e frosting al mascarpone / Carrots cream cupcakes with cardamom vanilla and mascarpone frosting


L'eleganza di mangiarsi un cupcake.
Beh, sui cupcakes si potrebbe scrivere un trattato: catturano l'occhio prima e la gola poi, belli e golosi con mille gusti e decorazioni. Tutto racchiuso in una piccola dolce torta.
E i cupcakes non potevano mancare: ve li proponiamo con crema di carote, al profumo di cardamomo e vaniglia e con un frosting delicato: sofficissimi e facili da fare. Come resistere?

Well, on the cupcakes you could write a treatise: catch the eye before and the throat then, beautiful and tempting with thousand flavors and decorations. All in a little sweet cake.
And the cupcake could not miss (in our corner): we suggest them with carrots cream, cardamom and vanilla scented, with a delicate frosting: so fluffy and easy to make.
How can you resist?


Ingredienti (per circa 10 cupcakes)
300g crema di carote
100g farina di mandorle
200g di farina per dolci
3 uova
15g lievito per dolci
1 bacca di vaniglia
1 cucchiaino di cardamomo in polvere
180g zucchero
250g mascarpone
zucchero a velo
1 pizzico di sale

Pulire le carote, tagliarle in piccoli pezzi, lessarli finche morbidi (e' possibile anche cuocerli a vapore per mantenerne le proprietà). Passare le carote nel frullatore ad immersione (senza acqua di cottura) fino ad ottenere una crema liscia e senza grumi(usiamo la crema di carote invece delle carote grattugiate per ottenere un risultato più soffice e umido). Lasciare raffreddare.


Sbattere le uova (con fruste elettriche) con lo zucchero, un pizzico di sale e i semi di vaniglia fino ad ottenere un composto spumoso. Aggiungere la crema di carote poco alla volta amalgamando con la spatola. Setacciare la farina con 15g di lievito e la farina di mandorle (un consiglio: è possibile frullare le mandorle spellate per ottenere la farina, è più economico) mescolare e aggiungere il cardamomo in polvere (ha un profumo buonissimo, perfetto per esaltare la dolcezza delle carote). Aggiungere (poco alla volta) le farine alle uova mescolando con una spatola dal basso verso l'alto finche ben incorporate.


Posizionare i pirottini in carta nello stampo da muffins, riempirli per 3/4 con il composto e cuocere a 180°C (preriscaldato statico sopra/sotto) per circa 30/35 minuti (ogni forno lavora in modo diverso perciò è meglio controllarli durante la cottura). Sfornare e lasciare raffreddare.


Preparare il frosting aggiungendo due cucchiai circa di zucchero a velo al mascarpone e lavorarlo con le fruste finche morbido. E' possibile aggiungere un po' di panna montata per rendere il frosting più dolce e per i più golosi anche un po' di cioccolato bianco fuso (da incorporare poco alla volta per evitare i grumi). Mettere il frosting in un sac a poche e decorare i cupcakes (abbiamo usato una bocchetta liscia ma le possibilità sono tantissime, molto carini anche se decorati con la bocchetta a stella).

 
Abbiamo servito i nostri cupcakes con fiori di santoreggia, un'erba aromatica molto profumata che si accosta bene a questo tipo di preparazione.
I cupcakes sono perfetti per molte occasioni: una festa, un brunch, un peccato di gola o anche per una pausa con gli amici...come Carrie e Miranda sedute di fronte alla  famosissima Magnolia Bakery... cupcakes, New York e molto fashion...(Sex & the City)

Ingredients (for about 10 cupcakes)
300g carrots cream
100g almonds flour
200g cake flour
3 eggs
15g baking powder
1 vanilla pod
1 teaspoon cardamom powder
180g sugar
250g mascarpone
icing sugar
a pinch of salt

Peel and clean carrots, cut into small pieces and boil them until well soft (you can also cook them steam to maintain their properties). Whisk the carrots with the immersion blender (without cooking water) until obtaining a smooth cream without lumps (We use the carrots cream instead of grated carrots to have a softer and moister cupcake). Allow to cool.


Beat the eggs (with electric whisk) with sugar, a pinch of salt and vanilla seeds until frothy. Add the carrots cream little at a time stirring with a spatula until well incorporated. Sift the cake flour with almonds flour (our tip: you can blend the peeled almonds to obtain the flour, it is cheaper) and 15g of baking powder, stir and add the cardamom powder (it has a delicious fragrance, perfect to bring out the sweetness of carrots). Add (little at a time) the flours into the eggs, stirring with a spatula from bottom up until well incorporated.


Place the paper cups into the muffins mold, fill them for 3/4 with the mix and bake at 180°C (preheated static top/bottom) for about 30/35 minutes (each oven works differently so check them during cooking). Remove from the oven and let cool.


Prepare the frosting by adding about 2 tablespoons of icing sugar to the mascarpone (if you have not you can replace it with creamcheese) work it with the whisks until soft. You can add whipped cream to mascarpone to make the frosting more delicious and for the sweet tooth a bit of melted White chocolate (add it little at a time to have not lumps). Pour the frosting in the sac a poche and decorate the cupcakes (we used a blain nozzle but the possibility are many, really lovely even with the "star" nozzle).


We have served our cupcakes with savory flowers, an aromatic herb with a lovely flavour that goes well with this preparation.
The cupcakes are perfect for many occasions: a party, a brunch, for a sin of gluttony or just for a break with friends like Carrie and Miranda sitting in front of the famous Magnolia Bakery...cupcakes, New York and fashion...(Sex & the City). What else? Enjoy...

Panfocaccia dolce con pere, miele e mandorle / Sweet panfocaccia with pears, honey and almonds


Buono come il pane appena sfornato
Il pane, il più vecchio comfort food, il più vecchio miracolo che si ricordi nella storia, ciò che Gesù moltiplicò. Nel suo nome e per la sua scarsità scoppiarono rivolte che si trasformarono in vere e proprie rivoluzioni. Caldo, fragrante, soffice o croccante, il pane è magia, semplicità e valore. La magia di pochi ingredienti che insieme creano mille forme e sapori. La semplicità di una cosa così importante che profuma di buono e che ci accompagna nella vita di tutti i giorni. Il valore di qualcosa di necessario dal sapore di futuro.

Un'introduzione al pane era doverosa!
Vi suggeriamo la ricetta di un pane soffice, dolce e profumato (che abbiamo ottenuto lavorando sulla nostra ricetta della focaccia), facile da fare e che si presta a mille interpretazioni, ci vuole solo un po' di pazienza per la lievitazione. (Alla fine del post troverete gli ingredienti anche per la versione salata!).


As good as freshly baked bread

The magic of a few ingredients that together creates thousands shapes and flavors. The simplicity of such a vital thing that smells good and accompanies us on our journey in life. The value of something so fundamental with such flavour that tastes of future.

An introduction dedicated to bread was dutiful!
Today we suggest you a recipe for a soft, sweet and fragrant bread (achieved by working on our recipe of the Italian focaccia), so easy to make and lends itself to a thousand interpretations, it just takes a little patience for the rising.(At the end of the post you will find the ingredients for the salty version too!).


Ingredienti
500g farina manitoba
360ml acqua tiepida
80g zucchero
1 cucchiaino di sale
2 cucchiai di miele
35g lievito madre secco
3/4 pere
succo di 1 limone
1 cucchiaio di zucchero
latte q.b.
mandorle q.b.
zucchero a velo

Sbucciare e privare del torsolo 3 pere (se piccole) o 4 (se grandi), noi abbiamo usato le Kaiser, tagliarle a dadini e aggiungere il succo di limone e 1 cucchiaio di zucchero. Lasciare riposare mescolando di tanto in tanto.
Sciogliere in acqua tiepida 80g di zucchero e 2 cucchiai di miele (noi abbiamo usato quello di acacia, molto delicato, ma potete usare quello che preferite). Setacciare 400g di farina (tenendo da parte la rimanente), aggiungere il lievito madre secco, un cucchiaino di sale e mescolare bene. Creare una fontana nel centro della farina, aggiungere l'acqua tiepida e mescolare con una forchetta e continuare impastando con le mani ( meglio con un'impastatrice). Questo composto deve essere lavorato poco per evitare che si scaldi e diventi pesante in cottura. Infarinare una boule di vetro, posizionare l'impasto, colpirlo qualche volta con il pugno e coprire con un panno umido. Lasciare lievitare per almeno 1 ora in un luogo caldo. Quando il composto ha raddoppiato il suo volume aggiungere le pere a dadini (senza il succo) e impastare aggiungendo i 100g di farina avanzata (setacciata) finche l'impasto sarà liscio e soffice (lavorare l'impasto per pochi minuti).



Mettere l'impasto in una teglia (con carta forno) dando la forma desiderata, noi abbiamo realizzato 6 palline che abbiamo disposto a fiore in una teglia rotonda, è possibile anche usare uno stampo a forma di colomba, se volete provare la ricetta per Pasqua. Lasciare riposare il panfocaccia per almeno 30/40 minuti, appena prima di infornare spennellare la superficie con del latte e cospargere di mandorle (intere o a lamelle).
Cuocere in forno preriscaldato (ventilato/grill) a 220°C per dieci minuti e proseguire la cottura (statico solo sotto) a 200°C per 15 minuti (ogni forno lavora in modo diverso perciò controllate la cottura).
Sfornare, lasciare raffreddare e cospargere di zucchero a velo. Amiamo servirlo con un po' di mascarpone mescolato al succo delle pere, ma è goloso anche da solo, o con un formaggio morbido ed erbe aromatiche per un abbinamento dolce/salato. E' perfetto per un brunch o magari per il pic-nic di Pasquetta! Enjoy...

Ovviamente potete farcirlo e aromatizzarlo a piacere! E se avanza potete tagliarlo a fette sottili e tostarlo in forno.


Ingredients
500g manitoba flour
360ml warm water
80g sugar
1 teaspoon salt
2 tablespoons honey
35g dry "mother" yeast
3/4 pears
1 lemmon juice
milk
almonds
icing sugar

Peel and remove the core of 3 pears (if small) or 4 (if large), we used the kaiser, cut into cubes and add the lemmon juice and a tablespoon sugar. Let stand stirring occasionally. Dissolve in warm water 80g sugar and 2 tablespoons honey (we used the acacia one, which is very delicate, but you can use the one you prefer). Sift 400g flour (keeping aside the remining), add the dry yeast, a tespoon of salt and mix well. Create a hole in the center of the flour, pour the warm water a little at a time beginnig to mix with a fork and continuing to knead with your hands (better with the mixer for dough). This mixture must be worked on not for a long tome to avoid becoming to hot and heavy during cooking. Flour a boule glass, place the dough, hit him few times with your fist and then cover with a damp cloth. Let rise for at least 1 hour in a warm place. When the mixture has doubled its volume add the diced pears (without the juice) and knead adding the remaining sifted flour (100g) until the dough is smooth and very soft (work it just for a few minutes).


Place it in a baking pan (with parchment paper) giving the desidered shape, we have achived 6 balls and we arranged as a flower in a round bakign pan...you can use a mold in the shape of a dove if you want to try the recipe for Easter. Let stand the panfocaccia for at least 30/40 minutes, brush the surface with milk and sparkle with almonds just before baking.
Bake in preheated oven (ventilated/grill) at 220°C for 10 minutes and continue the cooking at 200°C (static just under) for 15 minutes (every oven works differently so keep under control the cooking. Remove from oven, let cool and sprinkle with powdered sugar. We love to serve it with a bit of mascarpone mixed with the juice of pears, but it is also delicious on its own or with a soft cheese and aromatic herbs for a sweet/salty combination. It's perfect for a brunch or maybe for the pic-nic on Easter Monday! Enjoy...

Obviously you can stuff and spice it as you wish! And if you have some panfocaccia in advance you can cut it into thin slice and toast it.

Il panfocaccia è buono anche nella versione salata, basta impastare gli ingredienti (con lo stesso procedimento): 500g farina manitoba, 360ml acqua tiepida, 35g di lievito madre secco, un cucchiaino di zucchero e due abbondanti di sale. Lasciate lievitare due volte, prima nella boule coperto con canovaccio umido e poi su placca da forno (con carta forno). Il metodo di cottura è identico a quello sopra descritto. E' davvero goloso se servito con del buon olio extravergine d'oliva, sale in scaglie e magari salumi e formaggi...perfetto per un ricco aperitivo o un pranzo veloce.

The panfocaccia is also delicious in the salty version, just knead (with the same procedura): 500ml manitoba flour, 360ml warm water, 35g dry "mother" yeast, 1 teaspoon sugar and 2 abundant of salt. Let rise twice, in the glass boule covered with a damp cloth before and on the baking sheet (with oven paper) after. Use the same way of cooking of the sweet panfocaccia. It is really tasty served with a good extravergin olive oil, salt flakes and maybe Parma ham and cheese...perfect for a rich aperitif (Italian way) or a quick lunch.
