Soufflè cremoso all'arancia con vaniglia e amaretti / Creamy orange soufflè with vanilla and amaretti


Oggi ricetta golosa: un soufflè, ripieno di crema all'arancia e vaniglia con un tocco di amaretto e... vitamina C!

Today gorgeus recipe: a soufflè, with orange and vanilla custard filling and a touch of amaretto and Vitamin C!

Ingredienti (dosi per 6 tazzine)
150ml latte intero
100ml succo d'arancia
25g farina00
3 tuorli
70g zucchero
mezza bacca di vaniglia
scorza di 1 arancia

40g farina per dolci
1 cucchiaio di zucchero
1 tuorlo
3 albumi
un pizzico di sale
amaretti qb
burro qb
limone qb

Ridurre in polvere qualche amaretto, imburrare gli stampini (noi abbiamo usato le tazze da caffè) e cospargerne il fondo e i lati con gli amaretti sbriciolati. Riporre gli stampi in frigorifero. Spremere le arance (servono 100ml di succo filtrato) e grattugiarne la scorza (1 arancia). Tagliare mezza bacca di vaniglia e prelevare i semi con la punta di un coltello. Aggiungere i semi, la bacca e la scorza d'arancia al latte e lasciare riposare per qualche minuto. Cuocere il latte con gli aromi a fuoco basso senza portare a bollore. A parte mescolare con una frusta 3 tuorli e 70g zucchero, aggiungere poco alla volta la farina (25g) setacciata (continuando a mescolare), il succo d'arancia e il latte tiepido (filtrato) a filo. Cuocere a fuoco basso, continuando a mescolare con un cucchiaio di legno. Spegnere il fuoco quando la crema comincia ad addensarsi e "vela" il cucchiaio. Versare il composto in una boule di vetro o ceramica per fermare la cottura. Dividere la crema in due parti: coprirne una con la pellicola (a contatto) e aggiungere all'altra un tuorlo, un cucchiaio di zucchero e 40g di farina setacciata (meglio se per dolci) mescolando con la frusta. Montare 3 albumi a neve ben ferma con un pizzico di sale e qualche goccia di limone. Aggiungere gli albumi montati al composto mescolando delicatamente dal basso verso l'alto con una spatola. Versare un cucchiaio di composto negli stampini, uno di crema all'arancia (conservatene un po' in frigorifero, da aggiungere ai soufflè appena sfornati, saranno ancora più golosi con il contrasto tra caldo e freddo della crema)e coprire con il composto riempiendo 3/4 dello stampo.
Preriscaldare il forno a 180°C (ventilato) e abbassare a 150°C appena infornati i soufflè che dovranno cuocere per 20 minuti circa o finche ben dorati (ogni forno lavora in modo diverso, fate qualche prova per trovare la giusta cottura). Sfornare i soufflè e servirli caldi con un po' di zucchero a velo, ancora un po' di crema all'arancia e se vi piace con un bicchierino di Amaretto o Grand Marnier. E' davvero un dolce goloso, cremoso e profumato...Enjoy!

P.S.E speriamo che il soufflè non si sgonfi!!!

   

Ingredients (doses for 6 coffee cups)
150ml Whole milk
100ml orange juice
25g flour00
3 egg yolks
70g sugar
1/2 vanilla pod
zest of 1 orange

40g flour for sweets
1 tablespoon sugar
1 egg yolk
3 egg whites
a pinch of salt
amaretti as enough
butter as enough
lemmon as enough

Pulverize some amaretti (typical Italian cookies made with Almonds, if you have not use the digestive or the cookies you prefer) butter the molds or cups (we used the coffee cups) and sprinkle the bottom and sides with the amaretti crumbs. Place the molds in the fridge. Squeeze the oranges (you need 100ml of strained juice) and grate the zest (of 1 orange). Cut the half vanilla bean and pick up the seeds with the tip of a knife. Add the seeds and pod, and the orange zest into the milk and let rest for few minutes. Cook the milk over low heat without reaching the boil. By side stir with a whisk 3 egg yolks and  70g sugar, add the sifted flour (25g) little at a time continuing stirring, the orange juice and the warm milk (filtered). Cook over low heat stirring constantly with a wooden spoon. Turn off the fire when the cream begin to thick and "veals" the spoon. Pour the mixture into a boul of glass or ceramic to stop the cooking.
Divide the cream into two parts, covering one part with the film (to contact) and adding to the other part an egg yolk, a tablespoon sugar and 40g  sifted flour (better if for sweets)stirring with a whisk. Whisk 3 egg whites until stiff with a pinch of salt and few drops of lemmon. Combine the egg whites into the mixture stirring gently with a spatula from the bottom up. Pour into the molds or cups a spoonful of mixture, one of orange cream (Keep a little in the fridge to add to baked warm soufflè, they will be even more delicious with the contrast between hot and cold cream) and cover with the mixture again filling 3/4 of the mold.
Preheat the oven at 180°C (ventilated), lower the heat at 150°C when the soufflè are in the oven and bake for about 20 minutes or until Golden brown (every oven works differently, make some tests to find the right cooking). Take out the soufflè and serve warm with a little icing sugar, a bit more of orange cream and if you like with  a little glass of Amaretto (Italian liquor) or Grand Marnier.
It's a sweet really greedy, creamy and perfumed... Enjoy!

P.S. And we hope that the soufflè will not deflate!!!

ApfelStrudel


Visto che è un po' che non andiamo in Tirolo, abbiamo deciso di "portarlo" qui con il profumo e il sapore di uno dei dolci più tipici della zona. Lo strudel accende spesso il dibattito su quale sia la pasta più giusta per prepararlo: pasta sfoglia, pasta frolla sottile o pasta tirata? Quello con la pasta sfoglia è buono e molto veloce da fare (se si usa la pasta già pronta), ma probabilmente il meno tipico. Quando andiamo in montagna lo mangiamo sia con la pasta frolla sottile sia con la pasta tirata, entrambi buonissimi. Oggi vi suggeriamo la nostra versione della ricetta classica...con la pasta tirata.
P.S. E' la ricetta perfetta per il proposito "dovremmo mangiare più frutta"! :) :)

Since it's been a while that we don't go in Tyrol, we decided to "bring" it here, with a bit of fragrance and flavour of one of the typical sweet of there. The strudel often triggers a debate about what is the right pastry to prepare it: puff pastry, short thin pastry or rolled pastry? The one with puff pastry is good and very quick to do (if you use readymade dough), but probably the least typical. When we go in the Tyroler mountains we eat the strudel with the short thin pastry and also with the rolled pastry, both delicious. Today we suggest you our version of the classic recipe...with the rolled pastry.
P.S. It's the perfect recipe for the intention  "we should eat more fruit"! :) :)


Ingredienti
200g farina00
70ml acqua tiepida
1 uovo
2 cucchiai di zucchero a velo
1 goccio di aceto di vino bianco
un pizzico di sale
olio qb

5/6 mele
2 cucchiai di zucchero
1 limone (succo e scorza)
1 goccio di rum
60g pane grattugiato
50g zucchero
pinoli qb
uvetta qb
cannella in polvere qb
burro fuso qb

Setacciare la farina e lo zucchero a velo, aggiungere 1 uovo, un goccio di aceto di vino bianco, un goccio di olio e un pizzico di sale. Impastare fino ad ottenere un panetto liscio e molto soffice. Spennellare l'impasto con un po' di olio e lasciare riposare coperto con un canovaccio per almeno 30 minuti a temperatura ambiente. Nel frattempo sbucciare le mele (abbiamo usato le Golden delicious, croccanti e succose, 5/6 se sono piccole, circa 4 se sono grandi), rimuovere il torsolo e tagliarle a fettine sottili. Aggiungere subito il succo e la scorza grattugiata di 1 limone, un goccio di rum e due cucchiai di zucchero (noi abbiamo usato quello alla vaniglia, ma va bene anche quello normale)mescolare e lasciare riposare. Stendere l'impasto molto sottile su un canovaccio infarinato (come vuole la tradizione) prima con il mattarello e aiutandovi con le mani poi. Tostare il pane grattugiato con una noce di burro e spargerlo sull'impasto ,solo dove andrete a disporre le mele, così che ne possa assorbire il succo durante la cottura, quindi aggiungere le mele (senza il succo di marinatura)e cospargere con l'uvetta, i pinoli, la cannella in polvere (dosi a piacere) e 50g di zucchero. Il ripieno deve occupare 1/3 dell'impasto. Spennellare l'interno dell'impasto (senza ripieno) con il succo di marinatura delle mele e chiudere lo strudel aiutandovi con il canovaccio: ripiegare prima un bordo e poi l'altro (se necessario tagliare la pasta in eccesso), rincalzare i bordi esterni per non far uscire il succo durante la cottura e far scivolare lo strudel (molto delicatamente) su una placca con carta forno (ricordando che il pangrattato deve restare sempre nella parte inferiore). E' molto più facile a farsi che a dirsi. Spennellare lo strudel con il burro fuso e infornare a 180°C (statico sopra e sotto o ventilato per una pasta più croccante) per 30 minuti circa o finche ben dorato. Sfornare, lasciare riposare e cospargere con lo zucchero a velo. Servire tiepido, da solo, con gelato alla vaniglia, con crema inglese calda, con un ciuffo di panna o come preferite voi. Ovviamente, potete variare la ricetta secondo i vostri gusti e provare diverse combinazioni. E' davvero goloso e il profumo che invade casa mentre cuoce nel forno è davvero invitante! Enjoy...

200g flour00
70ml warm water
1 egg
2 tablespoons icing sugar
a drop of White vinegar
a pinch of salt
oil as enough

5/6 apples
2 tablespoons sugar
1 lemon (juice and zest)
a drop of rum
60g grated bread
50g sugar
raisins as enough
pineseeds as enough
cinnamon powder as enough
melted butter as enough

Sift the flour and the icing sugar, add the egg, a drop of oil and White vinegar, apinch of salt and Knead until obtaining a smooth and very soft dough, brush it with a little bit of oil and let it stand at room temperature, for at least 30 minutes covered with a towel. Meanwhile peel the apples (we used the Golden delicious, crunchy and so juicy, 5/6 if they are small, 4 if they are big), remove the core and cut into thin slices. Immediately add the lemon juice and its grated zest, a drop of rum and two tablespoons sugar (we used the vanilla one, but you can use also the White one), stir and let stand. Roll out the dough very thin on a floured cloth (as the tradition says) first with the rolling pin and with your hands then. Toast the grated bread with the butter and spred it on the dough, just where you are going to set the apples so that it can absorbe their juice during cooking. Arrange apples (without their marinade juice) on the grated bread and sprinkle with raisins, pineseeds, cinnamon (doses to taste) and 50g of sugar. The filling should occupy 1/3 of the pastry. Brush the inside of the dough (where there is not the filling) with the juice of the apples and close the strudel with the help of the cloth. Fold one free side of the pastry, then the other one (if necessary cut the sough in excess) and tuck in the ends so that the juice can't come out during cooking. Slide the strudel (very gently) on a baking sheet with oven paper (remembering that the grated bread has Always to be at the bottom). It is easier to do than to say! Brush the strudel with melted butter and bake at 180°C (static top and bottom or ventilated for a more crunchy pastry) for about 30 minutes or until Golden brown. Remove from oven, let stand and sprinkle with icing sugar. Seve lukewarm simply alone, with vanilla ice-cream, hot English custard, a dollop of whipped cream or as you like. Obviously you can vary the recipe to your liking trying many different combinations. It is really delicious and the smell that invades the house while cooking in the oven is really inviting! Enjoy...

Style-Post-It N°2 January ShopList


Le feste sono finte (da un po'...sigh), gli addobbi sono tornati nelle loro scatole, i pranzi ricchi e golosi hanno lasciato spazio a menu detox...beh, consoliamoci con un po' di shopping!
Winter Mood: l'Inverno è una stagione che adoriamo, anche per i suoi colori contrastanti: il legno, con il suo profumo intenso (che ci riporta alla mente bellissimi ricordi di montagna) e le sue mille sfumature, la neve, candida e soffice, sembra sempre portare un velo di silenzio e pace mentre cade leggera.

The Holidays are over (for quite some time...sigh), the decorations are back in their boxes, rich and gorgeus lunches have given way to detox menu...well, console ourselves with a little shopping!
Winter Mood: Winter is a season that we love, also for its contrasting colors: the wood, with its intence fragrance (which brings us to mind beautiful memories of mountain)and its many shades, the snow, White and soft, Always seems to bring a veal of silence and peace when light falls.

Happy Birthday!


Oggi il nostro Blog compie 1 anno! Un anno di ricette, che speriamo vi abbiano dato l'ispirazione, un anno nel quale TCCD è diventato Special Ambassador della rivista La Cucina Italiana, un anno di interessanti collaborazioni internazionali, e nel quale siamo arrivati in semifinale ai Food Blog Awards nelle categorie Sweet Food e Design, nel quale siamo stati intervistati da Silk & Salt e pubblicati su Immagina Magazine. Un anno di lavoro e soddisfazioni!
Ringraziamo tutti voi che siete passati ( e chi passerà!) a leggere e a curiosare.
E ora ripartiamo con nuove idee e progetti che speriamo di poter realizzare...e ovviamente con tante nuove ricette...continuate a seguirci!

Today our Blog is one Year old! A year of recipes, that we hope they have inspired you, a year in which TCCD became Special Ambassador of the magazine La Cucina Italiana, a year of interesting international collaborations, and in which we got the semifinals at the Food Blog Awards in the categories Sweet Food and Design, in which we were interviewd by Silk & Salt and pubblicated in Immagina Magazine. A year of work and satisfacions!
We thank all of you that are featured (or will do) here to read and browse.
And now we restart with new ideas and projects that we hope to realize, and new recipes of course...stay tuned!
