Sorbetto al melone con pepe nero / Melon sorbet with black pepper


Vi suggeriamo una ricetta perfetta per il weekend, fresca, profumata e come sempre molto facile da realizzare! Il sorbetto è un dessert al cucchiaio spesso servito per rinfrescare il palato tra una portata e l'altra nei pranzi molto ricchi o come leggero fine pasto. Questa è la nostra versione al melone con pepe nero...

We suggest you a recipe perfect for the weekend, fresh, fragrant and as Always very easy to make! The sorbet is a "spoon dessert" often served to refresh the palate between courses in very rich lunch or as a light end meal. This is our version with melon and black pepper...


Ingredienti
1 melone maturo
2 albumi
3 cucchiai di zucchero scarsi
un pizzico di sale
succo di 1/2 limone
pepe nero macinato

Prendere un melone maturo, privarlo della scorza e dei semi, tagliarlo a pezzetti e frullarlo con il succo di mezzo limone. Aggiungere 3 cucchiai scarsi di zucchero (se il melone è molto dolce solo 2) e mescolare bene. Montare i bianchi a neve con un pizzico di sale. Unire il melone frullato ai bianchi mescolando delicatamente dal basso verso l'alto con una spatola (potete aggiungere un goccio di Moscato se vi piace!). Versare il composto nella gelatiera precedentemente refrigerata e far lavorare per almeno 20 minuti. Quando il sorbetto è pronto per essere servito versare in bicchieri o tazzine e cospargere con pepe nero macinato (poco perché ha un sapore molto pungente, se non lo amate potete ovviamente non aggiungerlo).
Se non servite immediatamente il vostro sorbetto, conservatelo in freezer e tiratelo fuori qualche minuto prima di consumarlo, lasciatelo riposare e lavoratelo con la frusta per ottenere la cremosità tipica di questo dessert.
Se non avete la gelatiera seguite lo stesso procedimento, quando i composti saranno amalgamati riponetelo in freezer in un contenitore ghiacciato e mescolate con una frusta (per qualche minuto) ogni 15 minuti per almeno 3 volte (lasciatelo in freezer almeno 3 ore). Toglietelo dal freezer poco prima di servirlo, lasciatelo ammorbidire e lavoratelo un'ultima volta con le fruste finche sarà cremoso.
E' molto leggero e rinfrescante, perfetto da conservare in freezer per gli ospiti a sorpresa del weekend! E...se vi piace l'idea, servitelo con l'aperitivo accompagnato da crostini e prosciutto crudo (in questo caso aggiungete solo 1 cucchiaio di zucchero).
Ovviamente potete ripetere lo stesso procedimento con la frutta o verdura che più preferite...buonissimo con l'anguria, molto estivo...enjoy!


Ingredients
1 ripe melon
2 egg whites
3 scarce tablespoons sugar
a pinch of salt
1/2 lemon juice
ground black pepper

Take a ripe melon, deprive it of the rind and seeds, cut into small pieces and whip it with the juice of half a lemon. Add 3 scarse tablespoons sugar (only 2 if the melon is very sweet). Beat the egg Whites with a pinch of salt. Pour the whipped melon into the whites and stir gently from the bottom up with a spatula (you can add a splash of Moscato wine if you like!). Pour into ice-cream maker previously chilled to work for about 20 minutes. When ready to serve pour into glasses or cups and sprinkle with ground black pepper (don't overdo, it has a very pungent flavour and if you don't love it, don't add it!)
If you don't immediately serve your sorbet keep it in freezer and pull out few minutes before serving, let stand and knead with a whisk to regain the softness of this dessert.
If you don't have the ice-cream maker follow the same procedure, once the whipped melon and the whites are mixed store in the freezer in a chilled bowl and stir with a whisk (for a few minutes) every 15 minutes (about) at least 3 times(leave it in the freezer at least 3 ours). Pull it out of the freezer few minutes before serving, let it soften (just a little) and knead it one last time with a whisk until creamy.
It is really light and refreshing, perfect to keep in the freezer for sourprise guests during the weekend!...And if you like the idea, you can serve it with an aperitif accompanied by toasted bread and S.Daniele ham (in this case just add one tablespoon of sugar).
Of course you can repeat the same procedure with the fruit or veggies you prefer...also delicious and really summery with watermelon...enjoy!

Ghiaccioli con futta fiori e erbe / Popsicles with fruit flowers and herbs


E' scoppiato il caldo e noi vi suggeriamo i nostri ghiaccioli: facilissimi da fare, davvero carini da offrire agli ospiti e da provare in mille modi...c'è un'intera estate per gustarli!

The hot broke out and we suggets our popsicles: very easy to make, so nice to offer to guests and to try in a thousand ways...there's a Whole Summer to enjoy them!

Usiamo quasi sempre lo sciroppo al limone perchè si accosta bene al sapore di frutta, erbe e fiori: cuocere a fuoco basso 250ml di succo di limoni (non trattati) con 60gr di zucchero (per circa 6 mini ghiaccioli), portare a bollore, togliere dal fuoco e lasciare raffreddare. Mescolare due parti di sciroppo con una di acqua, la frutta, le erbe e i fiori. Potete fare gli abbinamenti che più preferite, noi abbiamo scelto: limone, fragole e foglie di basilico e limone, ciliegie e fiori di melissa. Versare il mix nei contenitori per ghiaccioli e riporli in freezer per almeno 3 ore. Se non avete i contenitori fate come noi: prendete i bicchieri di plastica piccoli, versate il mix, coprite con la pellicola, fate un buco al centro e infilate lo stecco (potete usare quelli da spiedino in legno tagliati a metà e privati della punta)...quando i ghiaccioli saranno pronti basterà premere leggermente la base del bicchiere per estrarli (se preferite potete riporre in freezer i ghiaccioli senza stecco e aggiungerlo circa 30 minuti dopo). Sono perfetti come merenda rinfrescante o da aggiungere a un cocktail per un tocco di profumo, colore e sapore. Enjoy!


We usually use the lemon syrup that goes well with fruits, edibile flowers and herbs. Cook over low heat 250ml lemon juice (not treated) with 60gr sugar (for about 6 mini popsicles), bring to a boil, take out of fire and let it cool. Mix 2 parts of syrup with one of water and add fruit, edible flowers and herbs. You can do the combinations you prefer, we choose: lemon, strawberries and basil leaves and lemon, cherries and flowers of lemon balm. Pour the mix into popsicles maker and keep them in freezer for about 3 hours. If you don't have popsicles maker do as we did: take small plastic cups, pour the mixture, cover with film, make a hole in the center and sneak one stick (you can use the wooden sticks for skewer cut in a half and deprived of tip) when they are ready just press lightly the base of the cup to extract your popsicle (you can also store them in freezer without stick  and add it after 30 minutes). They are perfect as a refreshing snack ot to add to a cocktail to give a touch of colour, scent and flavour (you can make them even smaller)...beautiful to see! Enjoy!

Crumble di ciliegie e dragoncello / Cherries and tarragon crumble


Inauguriamo Giugno e la stagione delle ciliegie con la nostra versione del crumble: una ricetta di origine inglese facile, golosa e davvero profumata!
P.S. E' proprio vero...una ciliegia tira l'altra!

Ingredienti
Per le ciliegie
500gr ciliegie
50gr zucchero
succo di 2 limoni medi
foglie di dragoncello fresco
1 pizzico di pepe nero
Per il crumble
200gr farina 00
100gr burro
50gr zucchero
briciole di amaretto o biscotto secco
noce di burro

Lavare le ciliegie, tagliarle a metà, privarle del nocciolo, condirle con zucchero, succo di limone, dragoncello tritato (meglio se con un coltello di ceramica per non ossidare le foglie) dal gusto leggermente vanigliato e un pizzico di pepe nero (se vi piace!) e lasciare marinare per circa 20/30 minuti mescolando di tanto in tanto. Diventeranno lucide e profumatissime! Nel frattempo preparare il crumble lavorando con la punta delle dita farina, zucchero e burro fino ad ottenere un composto granuloso. Imburrare una teglia da forno (meglio se di ceramica), cospargere il fondo con poche briciole di amaretto o biscotto secco, disporre le ciliegie con un po' di marinatura e coprire con il crumble. Cuocere in forno preriscaldato a 180°C per circa 40/45 minuti o finche ben dorato. Sfornare, lasciare intiepidire e servire con panna semi montata o gelato, la combinazione di consistenze e sapori è davvero unica! E' una ricetta facile che si presta a mille abbinamenti di frutta, erbe e spezie...da fare anche in versione salata! Perfetta per una merenda speciale (magari con amici) o da servire all'ora del tè...enjoy!

For the cherries
500gr cherries
50gr sugar
lemon juice of 2 medium lemons
fresh tarragon Leaves
a pinch of black pepper
For the crumble
200gr flour 00
100gr butter
50gr sugar
amaretto or biscuits crumbs
a little bit of butter

Wash the cherries, cut in half, remove the stones, season with sugar, lemon juice, chopped tarragon Leaves (better with a ceramic knife as not to oxidize the Leaves) with a lightly vanilla flavour and a pinch of black pepper (if you like!) and leave to marinate for about 20/30 minutes stirring occasionaly. They will become shiny and really fragrant! Meanwhile prepare the crumble working with your thingertips the flour, sugar and butter until mixture is grainy. Grease a baking sheet (preferably ceramic) sprinkle the bottom with a little bit of amaretto crumbs (a typical Italian biscuit made with bitter almonds) or  buiscuit crumbs, place the cherries with a little marinade and cover with the crumble. Bake in preheated oven at 180°C for about 40/45 minutes or until Golden brown. Remove from oven, let it cool and serve warm with soft whipped cream or ice-cream, the combination of the textures and flavours is truly unique! It's an easy recipe that lends itself to a thousand combinations of fruits, spices and herbs...to do even in savory version! Perfect for a special snack (maybe with friends) or to serve at tea time...enjoy!
