Millefoglie / Napoleon


Millefoglie
Come promesso vi suggeriamo questa ricetta facile e golosa con lemon curd e panna!

Napoleon
As promised we suggest you this easy and delicious recipe with lemon curd and cream!


Ingredienti
230 gr pasta sfoglia
lemon curd q.b.
200 ml panna da montare
1 cucchiaio di zucchero a velo
1 uovo
1 cucchiaino di zucchero o miele

Ingredients

1 tablespoon icing sugar

1 teaspoon sugar or honey

Stendere la pasta sfoglia e passarla con il mattarello, tagliare 24 dischi del diametro di 6 cm circa con un tagliapasta (abbiamo ottenuto 6 piccole millefoglie, ma potete farne anche una grande rotonda o rettangolare, o della forma che preferite, ricordando di usare più pasta sfoglia di quella indicata). Bucherellare i dischi con una forchetta (fatene parecchi in modo che la pasta non si gonfi durante la cottura). Sbattere un uovo con un cucchiaino di zucchero, o se vi piace, di miele e spennellare la superficie delle sfogliette. Disponetele su placca ricoperta di carta forno e cuocere in forno preriscaldato a 200°C (statico sopra e sotto) per circa 15/20 minuti o finche ben dorate (tenetele sotto controllo, ogni forno lavora in modo diverso!). Sfornatele e lasciatele raffreddare, nel frattempo aggiungere un cucchiaio di zucchero a velo alla panna e montatela. Assemblate le millefoglie alternando uno strato di sfoglia a uno di panna e di lemon curd (ovviamente potete usare la farcitura che più vi piace, deliziosa anche con crema diplomatica e fragole). Cospargete di zucchero a velo e servite. Sono perfette per un party con buffet, un brunch, e visto che non manca molto, come dolce per Pasqua...magari presentate a forma di colomba.

Roll out the puff pastry and pass it with the rolling pin, cut the dough with a cutter for pastry creating 24 discs with a diameter of about 6 cm (we made 6 little napoleon, but you can also make a large or rectangular big one, or give it the shape you prefer but in this case use more puff pastry). Prick the discs with a fork (make many holes so that the dough does not swell during cooking). Beat an egg with a teaspoon of sugar, or if you like of honey and brush the surface of the pastry. Arrange the discs on a baking sheet covered with parchment paper and bake in preheated oven at 200°C (static top and bottom) for about 15/20 minutes or until Golden brown (Keep them under control, because every oven works differently!). Take out of the oven and let them cool, in the meantime add a tablespoon icing sugar to the cream and whip it. Assemble the napoleon alternating the pastry discs, whipped cream and lemon curd (of course you can use the stuff you like more, would be delicious with diplomatic cream and strawberries!). Sprinkle with icing sugar and serve. They are perfect for a party with buffet, a brunch, and since it is not so far, as sweet for Easter, maybe served with dove shape! Enjoy!

Lemon curd


Lemon curd
Vi avevamo promesso che avremmo parlato ancora di limoni (non potremmo immaginare il mondo senza!) così vi suggeriamo una ricetta facile e veloce che potrete usare in mille modi!


We promised that we would talk about lemons again (we could not imagine the world without them!) so we suggest an easy and quick recipe that you can use in many ways!


Ingredienti
2 uova medie
70 gr zucchero
succo di 2 limoni (non trattati)
1 cucchiaio di zucchero a velo (non vanigliato)
50 gr burro fuso

Il lemon curd è una crema inglese che si può preparare in diversi modi, noi la facciamo così: mescolare con le fruste elettriche tutti gli ingredienti per circa 2/3 minuti e cuocere il composto a bagno-maria mescolando continuamente con un cucchiaio di legno. La crema è pronta quando vela il cucchiaio e comincia ad addensarsi. Togliere subito dal fuoco e lasciare raffreddare in un contenitore di ceramica o vetro (vasetti da conserva). Quando la crema è fredda riporre in frigorifero (si può conservare per qualche giorno). Perfetta da servire con un buon tè e toasts o biscotti (magari scones!), per farcire i vostri dolci (come tartellette di pasta frolla o sfoglia...), con una macedonia, e visto che Pasqua non è lontana, da servire con una fetta di Colomba artigianale...o come preferite voi! Enjoy!


Ingredients
2 medium eggs
70 gr sugar
lemon juice of 2 lemons (not treated)
1 tablespoon of icing sugar (not vanilla flavoured)
50 gr melted butter

The lemon curd is an English cream, there are different ways to prepare it, we do like this: mix with and electric whisk all the ingredients for about 2/3 minutes and cook the mixture in a baine-marie stirring constantly with a wooden spoon. The cream is ready when coats the spoon and begins to thicken. Immediately remove from the heat and let cool in a ceramic bowl or glass (preserve jars). When the cream is cold store it in the refrigerator (you can keep it for a few days). Perfect to serve with good tea and toast or cookies (maybe scones!), to stuff your sweets (like puff or short pastry tarts...), with a fruit salad and, since Easter is not so far, to be served with a slice of Colomba (typical Italian sweet eaten during Easter days)...or whatever you like! Enjoy!

Bignè / Cream Puffs


Bignè con crema diplomatica e panna montata.
Abbiamo superato i 5000 like sulla nostra pagina facebook e per festeggiare abbiamo preparato questi golosissimi bignè. La ricetta richiede un po' di pazienza e attenzione ai passaggi ma da grande soddisfazione sia per il risultato che per il palato!

We exceeded 5000 likes on our facebook page and to celebrate we have prepared these mouth-watering puffs. It's a recipe that requires a bit of patience and attention at the steps but that is very rewarding both for the outcome and for the palate!

Per la pasta choux / For the choux pastry



Ingredienti
200 ml acqua
100 gr burro
130 gr farina 00
4 uova medie
2 cucchiaini di zucchero
un pizzico di sale

Mescolare con le fruste il burro, lo zucchero, l'acqua e il sale e portare a bollore, togliere dal fuoco e aggiungere la farina setacciata poco alla volta incorporandola bene. Rimettere sul fuoco e continuare a cuocere continuando a mescolare con un cucchiaio di legno. Togliere dal fuoco quando il composto è compatto e si stacca completamente dalla pentola. Mettere su un piatto e lasciare raffreddare bene. Quando il composto è ben raffreddato aggiungere le uova una alla volta (ogni uovo deve essere ben amalgamato prima di aggiungere il successivo) mescolando con un cucchiaio di legno. Mettere la pasta nel sac-à-poche con bocchetta liscia e fare delle palline ben distanziate (su placca con carta forno). Cuocere in forno preriscaldato e ventilato a 170°C per circa 30 minuti o finche ben dorati (la cottura è uno step importante, ogni forno lavora in modo diverso, perciò la prima volta vi consigliamo di fare qualche prova prima di cuocere tutti i bignè). Togliere dal forno e lasciare raffreddare.


Ingredients
200 ml water
100 gr butter
130 gr flour 00
4 medium eggs
2 teaspoons sugar
a pinch of salt

Stir with the whisks butter, sugar, water and salt and bring to a boil. Remove from heat and add the sifted flour a little at a time, incorporating well. Put on the heat again and continue cooking, stirring with a wooden spoon. Remove from the heat when the mixture is compact and completely detach from the pan. Allow to cool throughly on a plate. When the mixture is well chilled add an egg at a time, stirring with a wooden spoon ( each egg has to be well mixed before adding the next). Put the dough into the sac-à-poche with smooth nezzle and make well distanciated balls (on baking pan with parchment paper). Bake in preheated convention oven at 170°C for about 30 minutes or until well Golden brown (cooking is an important step, every oven works differently, so for the first time we advise you to do some testing before baking all the puffs). Remove from oven and let them cool.

Per la crema diplomatica / For the diplomatic cream



Ingredienti
250 ml latte
20 gr farina 00
3 tuorli
85 gr zucchero
vaniglia (mezza bacca)
150 ml panna da montare
1 cucchiaio di zucchero a velo

200 ml panna da montare per la decorazione

Scaldare il latte con i semi di mezza bacca di vaniglia e portare a bollore. Sbattere con le fruste i tuorli e lo zucchero, aggiungere il latte a filo e la farina setacciata, rimettere sul fuoco continuando a mescolare. La crema è pronta quando diventa densa e vela il cucchiaio. Mettere la crema in una ciotola e coprire con pellicola a contatto e lasciare raffreddare. Aggiungere un cucchiaio di zucchero a velo alla panna e montare. Incorporare la panna montata alla crema mescolando bene.


Ingredients
250 ml milk
20 gr flour 00
3 yolks
85 gr sugar
vanilla (1/2 pod)
150 ml whipping cream
1 tablespoon icing sugar

200 ml whiiping cream for the decoration

Heat the milk with vanilla seeds and bring to a boil. Beat with electric whisk the yolks and sugar, then add the milk little at a time and the sifted flour, put on the heat again and continue stirring. The cream is ready when becomes more dense and coats the spoon. Put the cream in abowl and cover with palstic wrap to touch and allow to cool. Add a tablespoon of icing sugar to the whipping cream and whip it. Mix the cream with the whipped cream very well.

 

Potete farcire i bignè facendo un buco sul fondo e riempiendoli di crema diplomatica (con sac-à-poche)o, come abbiamo fatto noi: tagliate la parte superiore, farcite di crema diplomatica quella inferiore, decorate con la panna montata e cospargete di zucchero a velo. Ovviamente potete farcire con la crema che più preferite e decorare con frutta, caramello e molto altro...
Un'idea in più: riempite i vostri bignè di gelato e servite al momento, lasciando magari ai vostri ospiti la possibilità di scegliere e combinare più gusti! Enjoy!


You can stuff the puffs making a hole in the bottom and fill them with the diplomatic cream (with a sac-à-poche)or, as we did: cut the top, fill the bottom with cream, decorate with whipped cream and sparkle with icing sugar. Pf course you can stuff with the cream you prefer and decorate your puffs with fruit, caramel and much more...
One more idea: fill you puffs with ice-cream ande serve at the moment maybe letting your guest to choose and combine different flavours! Enjoy!

Party in giardino / Garden party



Party in giardino
Le Magnolie sono in fiore (o quasi), la Primavera è alle porte e noi vi suggeriamo qualche semplice idea per un party in giardino (da realizzare anche sul terrazzo!)...perfetto per ricevere ospiti  nei giorni di sole. Basta davvero poco: un piccolo buffet, qualche sedia, bicchieri ghiacciati e qualche fiore...magari proprio di Magnolia!

Garden Party
The Magnolias are in bloom (or almost), Spring is upon us and we suggest a few simple ideas for a garden party (to be carried out even on the terrace!)...perfect for receiving guestsin sunny days. You need not so much: a small buffet, few chairs, iced glasses and some flowers...maybe just the Magnolia ones!

Un consiglio: in Primavera il tempo cambia facilmente, lasciate qualche plaid a disposizione dei vostri ospiti, sarà un pensiero apprezzato!

A tip: the weather changes easily in Spring so leave some plaids available for your guests, it will be an appreciated thought!


E se il party si protrae fino al tramonto non dimenticate di accendere qualche candela per scaldare l'atmosfera...

And if the party goes on until sunset don't forget to light a few candles to to warm up the atmosphere...



Spesso in casa ci sono oggetti che non si usano che possono essere perfetti per i vostri allestimenti...guardatevi intorno, liberate l'immaginazione e date loro "nuova vita"!

Often there are items in your home that you don't use that can be perfect for your own settings...look around, free the imagination and give them "new life"!

Black and White for breakfast

Inauguriamo questo nuovo progetto con il Black & White, quel perfetto mix tra eleganza e sfrontatezza che ci riporta allo stile inconfondibile di Coco Chanel, ai Tuxedo di Yves Saint Laurent, ai vecchi film e fotografie dall'allure Vintage, alle parole e pensieri sul bianco puro sporcato di inchiostro nero, al bianco latte e al nero caffè, a una riga di eye-liner perfettamente disegnata,...(potremmo andare avanti all'infinito, toccando temi anche più profondi): é qualcosa che si impone con fermezza, sempre così attuale e a volte dolcemente malinconico. Forse abbiamo scelto il B & W, o lui ha scelto noi, perché qualche volta ci fermiamo a pensare e a osservare "senza colori" in attesa di una nuova primavera, ma è un momento che passa e se ne va! Certamente in queste foto sarebbe stata perfetta una 2.55 di Chanel...ma ancora ci manca (forse più a me che a mio marito!) ma ringraziamo la clutch di MMJ per la splendida interpretazione!

Inaugurating this new project with Blach & White, the perfect mix of elegance that brings us back to the unmistakable style of Coco Chanel, Yves Saint Laurent Tuxedo, the vintage allure of old films and photographs, the words and thoughts on the pure White smeared with blck ink, the White milk and black coffee, the eye-liner line perfectly Painted...(we could go on to infinity, touching on topics even deeper):it's something that remains imprinted firmly seeming ever so present, sometimes sweetly malinconic. Maybe we chose B & W, or it chose us, because sometimes we pause to think and observe "without colors" waiting for a new Spring...but it' just a moment that passes and goes away! Certainly in these pics would have been perfect a 2.55 Chanel but at the moment We're "missing" it (perhaps more to me than my husband!) but we thanks the MMJ clutch for the wonderful interpretation!

Pudding di riso al cocco e lime / Rice Pudding with coconut and lime

 

Ingredienti
Pudding
200 ml latte di cocco
300 ml latte intero
40 gr riso (arborio)
2 cucchiai zucchero
1 stecca di vaniglia
3 cucchiai di zucchero a velo
250 ml panna da montare
2 1/2 gelatina in fogli
Salsa al lime
5/6 lime (succo e scorza)
2 cucchiai di zucchero



Ingredients
For pudding
200 ml coconut milk
300 ml Whole milk
40 gr rice (arborio)
2 tablespoons sugar
1 vanilla pod
3 tablespoons icing sugar
250 ml whipping cream
2 1/2 gelatin sheets
For lime sauce
5/6 lime (juice and zest)
2 tablespoons icing sugar


Cuocere a fuoco medio basso il latte di cocco con il latte intero (250 ml), il riso, due cucchiai di zucchero e i semi e la stecca di vaniglia per circa 20 minuti o finche il riso risulti ben cotto (se dovesse asciugare troppo aggiungere del latte). Mettere i fogli di gelatina a bagno in acqua fredda, nel frattempo passare al mixer metà del composto di riso (togliere la stecca di vaniglia prima di frullare) aggiungendo poco alla volta il latte rimasto ( o di più se necessario) fino ad ottenere una morbida crema . Scaldare 1/3 di panna e sciogliervi i fogli di gelatina (strizzarli bene prima di unirli alla panna). Montare il resto della panna con 3 cucchiai di zucchero a velo. Mescolare il riso non frullato, la crema di riso frullata, la panna scaldata e incorporare delicatamente la panna montata con una spatola. Versare il composto negli stampi da budino, lasciare raffreddare e far riposare in frigorifero per almeno 3 ore. Sformare i puddings e servire con salsa al lime.
Per la salsa
Cuocere a fuoco basso il succo di 5/6 lime con 2 cucchiai di zucchero a velo, quando la salsa comincia a bollire togliere dal fuoco e versare sui puddings, decorare con scorza di lime o scaglie di cocco. Enjoy!


Cook over medium low heat coconut milk, Whole milk (250 ml), rice, 2 tablespoons sugar and vanilla seeds and pod for about 20 minutes or until the rice is well cooked ( add more milk if the mix is too dry). Put the gelatin sheets in cold water for a few minutes in the meantime whisk with the mixer half of the mixture of milk and rice, adding the remaining milk (or more if necessarY) little at a time until obtaining a soft cream (remove the vanilla pod before blending). Warm up 1/3 of whipping cream and whip the rest of cream with 3 tablespoons of icing sugar. Wring out well the gelatin sheets and melt them into the warm cream. Mix the rice and milk with the rice cream, the warm cream with gelatin sheets and incorporate the whipped cream gently with a spatula. Pour the pudding mixture into moulds, let it cool and rest in the refrigerator for at least 3 hours. Turn out the puddings and serve with lime sauce.
For the lime sauce
Cook over low heat 5/6 lime juice with about 2 tablespoons of icing sugar when the sauce begin to boil remove from heat and pour over the puddings, decorate with lime zest or coconut scales. Enjoy!
