Mousse au Chocolat


Potevamo concludere l'anno senza una ricetta al cioccolato? Assolutamente no!
P.S. Abbiamo lavorato al post la scorsa notte...speriamo vi piaccia!!!

Could we end the year without a chocolate recipe? Absolutely not!
P.S. We worked at the post last night...we hope you will like it!!!


Ingredienti
250ml panna fresca
150g cioccolato fondente al 60%
60g cioccolato al latte
3 uova ( separare albumi e tuorli)
3 cucchiai di zucchero
un pizzico di sale
A piacere
noce moscata
melograno

Tritare il cioccolato fondente e il cioccolato al latte. Scioglierli a fuoco basso con la panna e un bel pizzico di sale (perfette le scaglie di sale Maldon, ma potete usare anche quello fino), mescolando con una spatola per amalgamare bene (non superare i 50°C e non portare a bollore).Quando ben amalgamati spegnere il fuoco e lasciare intiepidire.
Montare i bianchi a neve ben ferma e aggiungere lo zucchero, un cucchiaio alla volta, continuando a montare con le fruste.
Amalgamare i tuorli (uno alla volta) al mix di cioccolato fuso.
Incorporare il cioccolato fuso agli albumi montati mescolando delicatamente con una spatola dal basso verso l'alto. E' importante aggiungere il composto agli albumi poco alla volta per evitare che si formino grumi di cioccolato, otterrete così una mouse liscia, soffice e spumosa.
Versare la mousse in tazze, mug o bicchieri (noi abbiamo usato le nostre coppe vintage) e riporre in frigorifero per almeno due ore.
Tiratele fuori giusto due minuti prima di servire e decorate a piacere, noi abbiamo grattugiato un pochino di noce moscata per dare carattere e aggiunto qualche chicco brillante di melograno, dal sapore fresco, dicono che porti fortuna...abbondiamo e qualche cialdina croccante al cacao e nocciole.
Un dessert perfetto per ogni occasione, da rivisitare in mille modi (se vi piace potete anche aggiungere un goccio di rum) una vera coccola per il palato!
La nostra mousse è pronta per la notte di Capodanno...per addolcire la fine di un anno un po' amaro.

Ingredients
250ml fresh cream
150g dark chocolate 60%
60g milk chocolate
3 eggs (separate yolks and whites)
3 tablespoons sugar
a pinch of salt
To taste
nutmeg
pomegranate

Chop the dark chocolate and the milk chocolate. Let it melt over low heat with cream and a good pinch of salt (Maldon flakes are perfect but you can also use the normal one)stirring with a spatula to mix well (don't go over a temperature of 50°C and don't boil).  When well melted turn off the heat and allow to cool.
Beat the egg whites until well stiff, add sugar a tablespoon at a time, continuing to Mount with the whisk. Stir in egg yolks, one at a time, to the chocolate mix. Stir the mixture to the egg whites stirring gently with a spatula from the bottom up. It is important that this takes place little at a time to prevents lumps of chocolate, this will give you a smooth, soft and fluffy mousse.
Pour the mixture into cups, mugs, glasses...(we used our vintage cups) and put in the refrigerator for at least two hours.
Pull them out just two minutes before serving and decorate as desired, we have grated a little bit of nutmeg to give character and some shiny grains of pomegranate with a fresh flavour, they say good luck...abound and some crispy tongues with cocoa and hazelnuts.
A perfect dessert for any occasion, to revisite in a thousand ways (you can also add a drop or rum if you like it) a real treat for the taste buds! Our mousse is ready for the S.Silvester night to sweeten the end of a little bitter year.

Semifreddo al Torroncino / Nougat Parfait


Se non avete ancora deciso quale sarà il dolce di Natale, questa potrebbe essere la ricetta giusta: si prepara in pochi minuti, si conserva in freezer (perciò potrete farlo in anticipo)e vi farà fare bella figura!

If you have not yet decided what will be the Christmas sweet, this recipe could be the right one: you make it in a few minutes, kept in freezer (so you can prepare it in advance) and it will make you a great figure!


Ingredienti (dosi per circa 8 persone)
5 albumi
100g zucchero a velo
500ml panna da montare
250g torrone duro con nocciole
un pizzico di sale
a piacere
amarene candite con sciroppo
scaglie di cioccolato fondente
nocciole tostate

Tritare finemente 3/4 di torrone (ridurlo in polvere) tritare grossolanamente al coltello la parte rimanente. Montare la panna (ben fredda) e riporla in frigor. Montare gli albumi a neve ben ferma con un pizzico di sale aggiungendo poco alla volta lo zucchero a velo. Incorporare delicatamente il torrone in polvere agli albumi e infine incorporare la panna montata ( a piacere potete aggiungere  un goccio di liquore o rum, frutta candita, gocce di cioccolato, o qualsiasi cosa vi ispiri abbinata al torrone). Versare il composto in uno stampo da freezer o in una boule rivestita di pellicola e riporre in freezer per almeno 6 ore (ancor meglio se per una notte).
 
Disporre il semifreddo su un piatto qualche minuto prima di servirlo, cospargere con il rimanente torrone tritato al coltello e decorare a piacere. Questo dolce è buonissimo anche così senza aggiungere altro, per apprezzare appieno il sapore delicato e profumato del torrone. Noi abbiamo aggiunto qualche  brillante amarena candita in sciroppo dal sapore deciso, scaglie di cioccolato fondente (sta benissimo con il torrone e l'amaro crea un buon contrasto con l'aspro & dolce delle amarene) e qualche nocciola tostata. 
Potete  anche servirlo con un po' di cioccolato fuso, con un mix di frutta secca caramellata o come preferite voi...ideale anche per farcire il Panettone!
Per noi è il dolce perfetto delle Feste! Enjoy...

Ingredients (doses for about 8 people)
5 egg whites
100g icing sugar
500ml whipping cream
250g hard nougat with hazelnuts
a pinch of salt
to taste
candied sour cherry with syrup
dark chocolate scales
toasted hazelnuts

Finely chop 3/4 of nougat ( make it in powder), chop coarsely the remaining with a knife. Whip the cream (very cold) and store in the freedge. Beat the egg whites until stiff with a pinch of salt adding little by little the icing sugar. Incorporate gently the nougat powder into the egg whites and finally fold in the whipped cream (to taste you can also add a dash of liquor or rum, candied fruit, chocolate chips or anything that can inspire combined with nougat). Pour the mixture into a refrigerator mold or in a bowl lined with plastic wrap and store in the freezer for at least 6 hours (even better if for a Whole night).

Arrange the parfait on a plate few minutes before serving, sprinkle with the remaining chopped nougat and decorate as you prefer. This sweet is delicious even served by this way, without adding anything, to fully appreciate the nougat delicate and fragrant flavor.
We have added some glossy candied sourcherries in syrup with a strong flavor, dark chocolate flakes (it goes great with nougat and the bitter creates a good contrast with the sweet & sour of sourcherries) and toasted hazelnuts.
Also delicious served with a bit of melted chocolate, with a mix of caramelled dried fruit, or as you like...also ideal to stuff the Panettone (typical Italian Christmas sweet)!
For us it's the perfect dessert for the Holidays! Enjoy...

Cioccolatini di Natale / Christmas Chocolates


Cioccolatini! Se volete fare un regalo "homemade" questa è un'idea davvero carina, facile e come sempre golosa!

Chocolates! If you want to make "homemade" gifts this idea is really pretty, easy and as Always delicious!


Ingredienti (dosi per stampo Silikomart)

Per 25 cioccolatini
200g cioccolato fondente (51%)
2 cucchiaini di spezie in polvere per pandizenzero (cannella, zenzero, noce moscata, vaniglia, chiodi di garofano)
un pizzico di sale in scaglie Maldon

Per 25 cioccolatini
200g cioccolato gianduia
nocciole tritate q.b.
un cucchiaino di scorza di mandarino (grattugiata fine)
un pizzico di sale in scaglie Maldon

Per 25 cioccolatini
200g cioccolato bianco
pistacchi di Bronte tritati q.b.
un pizzico di sale in scaglie Maldon

Tritare il cioccolato e scioglierlo a bagno maria con un pizzico di sale in scaglie (potete usare anche quello normale), la temperatura non deve mai superare i 45°C. Aggiungere spezie, frutta secca, briciole di meringa o ciò che avete scelto per aromatizzare i vostri cioccolatini, mescolare e versare nello stampo di silicone (deve essere ben asciutto), eliminate il cioccolato in eccesso con una spatola piatta. Battere lo stampo sul piano di lavoro per eliminare eventuali bolle d'aria e lasciare riposare qualche minuto a temperatura ambiente. Riporre lo stampo in frigorifero per almeno 45 minuti (qualche minuto in più per il cioccolato bianco) prima di togliere i cioccolatini dallo stampo. Sono perfetti da servire al momento del caffè o durante le feste di Natale...andranno a ruba! Se pensate di regalarli metteteli in una scatola, una tazza, un vasetto, aggiungete un nastro, qualche decorazione e un biglietto con un pensiero e il vostro dono sarà sicuramente molto apprezzato! Enjoy...

-Cioccolato fondente al pandizenzero (cannella, zenzero, vaniglia, noce moscata e chiodi di garofano)

Ingredients (doses for Silikomart mould)

For 25 chocolates
200g dark chocolate (51%)
2 tespoons  powder spices for gingerbread (ginger, cinnamon, nutmeg, cloves, vanilla)
a pinch of Maldon Crystals Salt

For 25 chocolates
200g gianduia chocolate
chopped hazelnuts
a teaspoon of tangerine zests (grated thin)
a pinch of Maldon Crystals Salt

For 25 chocolates
200g White chocolate
chopped pistachios from Bronte
a pinch of Maldon Crystals Salt

Chop the chocolate and melt it in a bain marie with a pinch of salt (you can also use the normal salt), the temperature has to remain below 45°C. Add spices, dried fruit, meringue crumble or what you choose to flavour your chocolates, stir and pour into the mould (it has to be dry), remove the chocolate in excess with a flat spatula. Beat the mould on the working table to deflate air bubbles and let stand at room temperature a few minutes. Keep in the freedge for at least 45 minute (a few more for the White chocolates) before taking them out of the mold. They are very nice to serve at the coffee time or during the Christmas feasts...they will be snapped up! If you like to make gifts just put them in a box, a mug or a jar, add a ribbon, some decorations and a card with a thought and your gifts will be surely appreciate! Enjoy...

Torta al cioccolato con vaniglia & bourbon / Chocolate Cake with vanilla & bourbon

 
 
 

E poi arriva il cioccolato, interprete assoluto di questa torta facile da fare, profumatissima, soffice e umida all'interno con una copertura di ganache brillante. Un vero peccato di gola!

And then comes the chocolate, Absolut interpreter of this cake easy to make, so scented, soft and moist inside with a coverage of shiny ganache. A really pity throat!


Ingredienti
200g cioccolato fondente
200g burro
200g zucchero
4 uova
1 bicchierino di bourbon o latte (10ml circa)
2 cucchiai di farina00
1 cucchiaino di lievito
1 bacca di vaniglia
1 pizzico di sale

Per la ganache
250ml panna
100g cioccolato fondente
una noce di burro
un pizzico di sale

Sciogliere a bagno-Maria il cioccolato con il burro e un pizzico di sale (perfetti i cristalli di sale Maldon). Scegliete il cioccolato fondente che più preferite, più la percentuale di cacao è alta più il cioccolato è amaro: 43% extra, 50%surfin, 60%extra bitter, 70%amarissimo...(noi l'abbiamo usato al 71%). Lavorare tuorli e zucchero con le fruste elettriche e aggiungervi il cioccolato fuso mescolando con una spatola (versare il cioccolato poco alla volta continuando ad amalgamare per ottenere un composto liscio ed evitare che si formino i cristalli di cioccolato, questo procedimento è perfetto anche per la preparazione di mousse, cheesecakes...) Tagliare la bacca di vaniglia per il lungo e prelevare i semi con la lama del coltello e aggiungerli al composto. Aggiungere due cucchiai di farina setacciata e un cucchiaino di lievito per dolci (sciolto in un bicchierino di bourbon, circa 10ml, o latte se preferite) e mescolare bene. Montare gli albumi a neve ben ferma e incorporarli al composto mescolando con una spatola dal basso verso l'alto. Imburrare e infarinare uno stampo a cerniera (di circa 20cm di diametro), versare il composto e infornare a 180°C preriscaldato-statico per circa 40 minuti (ogni forno lavora in modo diverso, perciò la prima volta tenete sotto controllo la cottura). Sfornare e lasciare intiepidire prima di servire, questa torta è buonissima già così, da servire magari con un ciuffo di panna e frutta secca caramellata.

Preparate la ganache per una versione ancora più golosa: portare a bollore la panna con una noce di burro, aggiungere il cioccolato a pezzetti e un pizzico di sale (vi consigliamo di sceglierne uno non troppo amaro, noi abbiamo usato un 51%) mescolando continuamente. Spegnere il fuoco e continuare a mescolare finche la ganache non sarà lucida e densa. Versare la ganache sulla torta lasciando che la ricopra e decorare a piacere, noi abbiamo usato una pera cotta con spezie e tagliata a ventaglio e dato un tocco invernale e di festa con qualche pigna innevata. Per gli amanti del cioccolato...una vera coccola! Enjoy...


Ingredients
200g dark chocolate
200g butter
200g sugar
4 eggs
1 little glass of bourbon or milk (about 10ml)
2 tablespoons flour00
1 teaspoon baking powder
1 vanilla pod
a pinch of salt

For the ganache
250ml cream
100g dark chocolate
a knob of butter
a pinch of salt

Melt in a bain-marie the chocolate, the butter and a pinch of salt (the Maldon crystals salt are perfect with chocolate). Choose the dark chocolate you prefer, more the percentage of cocoa is high more the chocolate is bitter: 43%extra, 50%surfin, 60%extra bitter, 70%so bitter...we used a 71% chocolate. Beat the yolks and sugar with an electric whisk, add the melted chocolate in it mixing well with a spatula (pour the chocolate little at a time to obtain a soft mixture wihout chocolate crystals, this process is also perfect to make mousses, cheesecakes...). Cut the vanilla pod lengthwise, remove the seeds with a knife and add them to the compost. Add to the mix two tablespoons of sifted flour and a teaspoon of baking powder (melted in a little glass of bourbon or milk if you prefer) and mix well. Whisk the whites egg until stiff and add to the mixture stirring gently with a spatula from bottom up. Grease and flour a cake mold hinge (diameter of about 20cm), pour the mixture and bake at 180°C preheated-static for about 40 minutes (each oven works differently so for the first time check the cooking). Take out of the oven and let stand, this cake is really delicious even  this way, maybe served with a dollop of whipped cream and caramelled nuts.

For a more gorgeus cake prepare the ganache: boil the cream with the butter, add chopped chocolate and a pinch of salt (we suggest you to use a less bitter one, we used a 51%). Melt the chocolate, turn off the heat and go on stirring until the mixture is thick and glossy. Pour the ganache over the cake, let it cover all the surface and decorate as desired, we choose a cutted fan baked pear with spices and given a touch of winter and feasts with some snowy pinecones. For chocolate lovers...is a real cuddle! Enjoy...
